Easy, quick and delicious Rice Krispie Treats

One of the BEST things in life is a GOOD soft, tasty Rice Krispie treat! 

But it has to be soft.

Yummy marshmellowy.

A little gooey, but not real sticky or that’s just a mess.

Most important it needs to have great flavor and not be bland and tasteless.

Do these sound like your kind of perfection in a Rice Krispie Treat?

If it does, and you love them like I enjoy a really good one, then I have the perfect recipe for you!

Making these soft delicious treats in a pan to cut into the usual bar, which is great. But I have a something special for you!  It’s a simple and clever way to have fun eating them, and of course, sharing them too.

These stay-soft best ever rice krispie treats and pops are  a family favorite.  Not only because they are very inexpensive to make, they are so simple, you’ll make them up often with the kids or grand kids as a quick and easy dessert and special treat.

 

 

Stay-Soft BEST Ever Rice Krispie Treats and Pops

Ingredients:

4 Tablespoons butter (1/2 stick)

10 oz. mini marshmellows (or large ones in a 10 oz. bag)

5  1/3 cup of rice krispie dry cereal

*Additional 1-4 Tablespoons of additional butter

Optional:  Biscuit cutter, melting chocolate buttons or chocolate chips, sprinkles, parchment paper, cellophane bags, -use the right sized cutter with the bag:), ribbon

 

Directions:

Using some of the additional butter (1-2 Tablespoons), lightly butter either a 9″ x 13″ cake pan or a jelly roll pan that has sides; depending on how thick you want to make your treats.

Pre-measure your rice krispie dry cereal into a bowl.

Set it aside. 

If making Pop’s lay a piece of parchment out near you, but not in your way of working.  

In a large saucepan, melt the 4 Tablespoons butter (1/2 stick) over low heat.

Add in the marshmallows and stir continually.

Keep stirring until they are completely melted – being careful not to burn them.

Remove the pan from the heat and gently stir in the rice krispie cereal.

Folding in until it is completely covered

Spread the mixture into the buttered pan of your choice.  Using buttered hands (with the rest of the butter), pack it down firmly if you are going to cut out shapes.

Allow the mixture to cool completely in the pan.

Cut them into bars for the original treat.

Store in an airtight container to keep them soft and perfect.

 

 

To make the POP’S, using a muffin or biscuit cutter (or anything that is round and will go through the depth of the mixture and cut)

push through to the bottom, using a firm pushing down motion.Rice Krispie Treats

Take your circle out and push a craft stick into the center of one end to make a POP.

Do this with all of your POP’s until you cannot cut anymore shapes out.  

Put your melting buttons or chocolate chips into a microwavable bowl.  Heat for 30 seconds and stir.  Rice Krispie Treats

Repeat this process until the chocolate is completely smooth and warmed through, but not hot.Rice Krispie Treats

Dip one of the POP’s into the chocolate, helping with a spatula, spoon, or another utensil to cover up as far as you desire, and also to help scrap off the backside and make the chocolate layer more even all around.Rice Krispie Treats

Cover with sprinkles (or heath bits as shown) while with chocolate is still wet on the POP. Rice Krispie Treats

Lay on the prepared parchment paper and allow the POPs to set up. Rice Krispie Treats

To make them even more presentable for gifts, etc.  have cellophane bags that are larger than the POPs.   

Put the POP end into the bag first so the stick may sticking out of the bag; depending on the length.

Now tie with ribbons, or whatever you desire. 

Makes a great gift, take-home treat, oh there are so many uses for this scrumptious treat.

to make with your family or to give away.

Rolls out easily, works wonderfully with cookie cutters and the taste is amazing.  Not too sweet, is soft and holds it shape.

I also have a glaze that does not compete with the cookie and sets up fabulous and nice as a canvas for gel frosting or can stand on its own. 

AND I share a buttercream frosting so the kiddos can have a blast decorating, or you to wax creative.

Best Cut Out Halloween Sugar Cookies

Ingredients:
1 cup butter, softened
1 cup granulated sugar
¼ cup brown sugar, packed
2 eggs
½ cup milk
2 tsp. vanilla

1 lemon, zest
2 Tbl. honey
Dash nutmeg
¼ tsp. salt
½ tsp. baking soda
½ tsp. baking powder
4-5 cups flour

Powdered sugar

Directions:
Heat oven to 325 degrees
Cream together the butter and sugars until light and fluffy, about 3 minutes.

Add eggs, milk, vanilla lemon zest, honey and mix well.

Next add in the salt and baking soda and baking powder and combine into the creamed mixture.

Pour in 3 cups of the flour and mix.

Do NOT mix more than needed, just enough to combine.  

Add in ½ cup at a time until the dough is soft and barely slightly sticky dough to the touch.

You need to be able to handle the dough and roll it out, but it can’t be too sticky either.

Caution: Adding in too much flour, or over-mixing makes the dough tough.



On a large clean surface spread a layer of powdered sugar.

That’s right powdered sugar.Place a portion of the cookie dough on the powdered sugar, sprinkle more powdered sugar over top and roll out to 3/8” thickness.

The reason for powdered sugar and not flour, is that it doesn’t make the dough tough.Cut to desired shapes.Bake on parchment or for best results, or coat a non-stick pan with cooking spray (but if using the pan and not the parchment.

I found I needed to work at loosening the cookies afterwords)

Bake for 10-12 minutes or just until the edges are beginning to turn brown.Allow to cool then remove to cooling racks to frost or glaze.

Ingredients:
2 ¼ cups powdered sugar
2 Tbl. corn syrup
½ tsp. vanilla
1/8 tsp. almond extract
2-3 Tbl. milk

Mix ingredients together well; beginning with 1 Tbl. milk

Add just enough milk to make a glaze to your desired consistency.

Dip cookie to glaze

OR use a spatula to coat the surface if cookie is a cut out such as the shapes shown above for best results

Butter Cream Frosting

Ingredients:

1 cup butter
1 tsp. vanilla
1/4 tsp.salt
3 ½ – 4 cups powdered sugar
2-4 Tbl. milk or cream
Gel or paste food coloring if desired

Directions:

Beat together butter, sugar, salt and vanilla and 1 Tbl. cream or milk.

Add in additional milk or cream to desired consistency.

If desired beat in food coloring.

I am excited to share the BEST Ever St. Patrick’s Day FUN Foods with you!
I don’t think there is a lick of Irish in our family line, but this is one of our family’s favorite holidays.
If you are looking for breakfast, lunch and dinner food ideas for kids along with party ideas, I have it here for you.
Celebrating with green food, desserts, Leprechaun tricks and healthy food as well as treats, that are easy, simple and quick; will fill St. Paddy’s with family fun memories.
 




BEST Ever St. Patrick’s Day FUN Foods
 
St. Patrick’s Day is a day I tried to make special – just because!
When the kids were young they made Leprechaun traps that were silly, but serious business to them.
The ‘Leprechaun’ was always prepared with a treat and a note of Sorry, they didn’t catch him this year and better luck next time.
It was MUST that there is a Treasure Hunt such as this:

  •       It was low key with Leprechaun footprints to lead to the prize when the kids were young.
  •      As they got older I had treasure hunt clues leading to places around the house.
  •      When a bit older (yes as teens and even young adults they wanted it), I contacted neighbors for their permission to leave clues in their mailbox, on their porch, or a chair in their yard; with a clue for the hunt.

Green candy, gold chocolate coins were a constant prize of the treasure.  
Food for the day was a celebration and was based on how busy I was, and their time due to sports and extracurricular activities

  •  Breakfast menu options:

                    Green pancakes – HERE is my Grandma’s recipe
OR use a packaged product to make it easier.
Either way, simply add in green food coloring. St Patrick's Pancakes
And cook as directed.

Green Scrambled Eggs – Green Eggs & Ham

Add in green food coloring,St Patricks Green Eggs & Ham!
Pieces of ham and serve alone, or inside a spinach tortilla or alongside green toast.

Green Banana smoothie
Directions:
In a blender, mix:
1 cup vanilla yogurt
1-2 frozen banana(s),
1/4 cup milk and green food coloring
Combine all the ingredients in a blender until smooth; serve immediately.
