You don’t have to wait for St. Patrick’s Day to make the BEST Reuben Sandwich ever!  

This best Reuben Sandwich is a must in your regular meal rotation, because it’s so delicious. 

Start with lots of tender corned beef stuffed in between thick slices of marbled rye bread.

Generously spoon on the quick to make homemade crisp slaw; which compliments the corned beef amazingly. 

Then top it all off with a Thousand Island dressing that you make yourself in hardly any time at all.  This sauce is better than anything you can purchase, seriously it’s fabulous. 

The combination of layers creates one of the most extraordinary sandwiches you’ll ever eat.   

In the Reuben you can use slow cooked corn beef, and the link is HERE , or  you can use deli pastrami to make it even easier. Either way, this sandwich will satisfy even the heartiest appetite.

It’s an excellent choice in sandwich to take on an outing, a picnic, or to make ahead for a busy day because it’s a crowd- pleaser, and your family will ask for it often. 




The BEST Reuben Sandwich with Homemade Slaw & Homemade Thousand Island Dressing

Ingredients:

Rye Bread OR Marbled Rye Bread

Cooked Corn Beef (click HERE for my recipe to cook it yourself, just stop before adding in the potatoes, cabbage, etc.), deli sliced corn beef or pastrami

Homemade Broccoli Slaw, recipe below

Homemade Thousand Island Dressing, recipe below

 

Directions for assembling the Reuben:

       1- Place a piece of bread on plate.

       2- Generously place cooked corn beef

       3- Spoon mixed slaw liberally over meat

       4- Pour dressing over slaw

       5- Top with another slice of bread

ENJOY!

 

Homemade Broccoli Slaw

Ingredients:

1/3  cup real mayonnaise (can use Miracle Whip, but it tends to overpower it with sweetness)

1/8 tsp. celery seed

1/8 tsp. garlic powder

1/8 tsp. onion powder

1/8 tsp. Emerill Original Seasoning

3 tsp. seasoned rice vinegar (vinegar with sugar added)

12 oz. broccoli slaw

5-6 green onions, sliced thin




Directions for slaw:

To make the Homemade Thousand Island Dressing:

1- Combine the mayonnaise, celery seed, garlic powder, onion powder Emerill’s Original Seasoning and rice wine vinegar.

2- Allow to sit 15 minutes to overnight. 

 

Thirty minutes to 2 hours before serving/assembling the Reuben sandwich:

In a large bowl, combine the broccoli slaw, sliced onions and dressing.

Mix the dressing into the broccoli slaw.

Serve. 

Keep any leftovers in the refrigerator, use within 2 days.Broccoli Slaw 3




Homemade Thousand Island Dressing

Ingredients:

1 cup REAL mayonnaise

1/4 cup chili sauce

1 Tbl. minced yellow onion

1 Tbl. minced dill pickle

1 Tbl. minced celery

1 Tbl. sour cream

1/2 tsp. dry mustard

dash hot pepper sauce

1/4 tsp. Worcestershire sauce

1/4 tsp. sugar

Salt to taste



Directions for Homemade Thousand Island Dressing:

1- In a bowl combine all the ingredients and mix well.Thousand Island Dressing2- Cover and refrigerate for at least 30 minutes to allow the flavors to marry.

To make a mouth-watering fabulous sandwich: lay down some of my easy to make crockpot corned beef, or deli pastrami, a generous helping of the slaw and slather with the homemade sauce.

It was a wonderful 2nd Sunday with a great turn-out. We had approximately 60 people come join us!  Once a month Stan and I open our home to our neighborhood for dinner, socializing and making friends.  A HUGE THANKS to our kids who also help with preparations, cooking, cleaning and during the dinner.  Stan and I were lucky (thanks to Tawni for the heads up) to get corned beef on a killer sale after St. Patrick’s Day, so I wrapped it well and put it in the freezer.  I was so excited to have the opportunity to serve Reuben sandwiches for the main course – it’s one of my very favorites. Aspen Mills Bread Company has very affordable marbled rye bread that is so delicious; and it paired perfectly with my cooked corned beef, slaw and dressing. Yes, I know that Reuben’s are served with Sauerkraut, but I decided to tweek it and serve it with crunchy slaw that is my own recipe. I love it this way.  The slaw is not too saucy, nor overpowered with the dressing and when using the broccoli slaw mix, it stays crunchy and crisp. The homemade Thousand Island dressing is a perfect fit for this sandwich. The German Potato Salad is great for summer since it does not have mayo in the dressing. I love the fresh flavors of this dish. For a dessert I made the the most decadent Brownie Cupcakes. These are not too chocolatey and do not need frosting – believe me, they are moist and uuummmmm good.

A remarkable night largely due to the wonderful Sister Missionaries –  Awesome friends seated on the couch too!
