Supplies: I used Staples Inkjet Gloss White Magnet Sheets   Directions: Get your favorite selfies, family pictures or fun pics. Load onto your computer and print them out on the magnet sheet.Magnet Picture

Cut them out and presto – personalized magnets to hang on the fridge, in the office or anywhere metal Extra pieces trimmed off the photos can be drawn on, or a special message written,  for a personalized gift.

#3  – Foam Coozy
These would be terrific as a pencil holder, a flower pot (it has a small hole in the bottom which would allow water to drain) or filled with mom’s favorite candy.  Supplies: Foam coozy holders Foam stickers Items to fill coozy

#4 – Chip Clips
 Wanbi Tape Clothes Pins Mod Podge & foam brush, optional

Directions:
Have kids (help if young) center the wasabi tape on the paperclip and press down, tucking under on ends. Do this on both sides of the clothes pin. If desired, have child (or help if needed ) cover the wasabi tape covered clothes pin with mod podge which will help it last longer and keep it nice.  Also, the bit that is folded over the sides

Chocolate Dipped Banana’s to make frozen pops

I loved making these Chocolate Dipped Banana Pops for my kids while they were growing up and then teaching them how to make them as they learned to cook.  

Chocolate Dipped Banana Pops are perfect for a hot day, or any time family and friends get together.

Besides being very economical , they are so simply and quick, it’s a great treat or snack to whip up; and who doesn’t love chocolate!

Dipping the Chocolate Dipped Banana Pops in sprinkles, nuts, whatever you’d like makes them special to your taste.  Freeze extra to have on hand for a frozen tasty dessert. 




Chocolate Dipped Banana Pops

Ingredients:

6 -8 large bananas  (use bananas that are ripe, but firm and not too ripe – see picture below)

1 bag of semi sweet or milk chocolate chips

1 Tbl. shortening

Toppings:  sprinkles, chopped nuts, coconut (toasted makes it better) or whatever you’d like

craft sticks aka Popsicle sticks

 




 

Directions:

Line a cookie sheet with parchment paper or waxed paper

Cut the bananas in half , or in chunks about 3 inches in length, which is actually easier for dipping and eating.

Chocolate Banana PopsMake a small slit in 3 places at the cut end of the banana to make it easier to peel. Chocolate Banana Pops

Place stick in end of the banana, pushing in about half way through to make it secure.

If cutting into chunks, push craft stick almost through the banana piece.

 

Chocolate Banana PopsPlace bananas in freezer to help them be a bit more firm when dipping. While the bananas are in the freezer, pour the chocolate chips into a microwavable bowl, along with the shortening.Heat the chocolate chips and shortening for 30 seconds, stir and repeat a few times until the chocolate is melted and smooth. **Do not over heat as this will make the chocolate clumpy and not usable for this recipe.When the chocolate is melted, take the bananas out of the freezer, and one at a time, roll in the bowl of melted chocolate using a spatula to help coat the banana with chocolate, scrapping of a bit of chocolate if it is too thick.Chocolate Banana Pops

Roll in desired toppings, or leave plain.  

Chocolate Banana PopsPlace the bananas back in the freezer to firm up as each one is coated.                                                                                                                                                                                                                  Enjoy now while the center is still soft, or place in a zip-lock freezer bag to eat later.                                                                                                                                               Some like the frozen bananas straight from the freezer and some like to let them sit at room temperature for 10-15 minutes to soften a bit making the center of the banana creamy and like ice cream. Either way, ENJOY!!!

A Caribbean Jerk seasoned shrimp with a sweet and savory mango salsa

Grilled Shrimp Wrap with Mango Salsa

 

Grilled Shrimp Wrap with Mango Salsa is one of my favorite summer-time meals! 

I love the Caribbean Jerk seasoning on the barbecued shrimp; what flavor.

Wrap it up in a tortilla with crunchy romaine lettuce, some really good brand sweet and savory mango salsa and it takes this to gourmet 5-Star level.  

You’d never guess it’s a healthy dish because it tastes that good.

If you want to try another shrimp recipe, another favorite is this Sassy Orange Grilled Shrimp.

Grilled Shrimp Wrap with Mango Salsa

Ingredients for Shrimp Marinade:

1 pound medium shrimp, shelled, deveined and remove tail

3 Tbl. oil, your choice of vegetable or olive

2 tsp. brown sugar

1 Tbl. + 1/2 tsp. McCormick Perfect Pinch Caribbean Jerk Seasoning

Wood or metal skewers

 

Directions for the Shrimp Marinade:

If using wood skewers, place them in a baking dish full of water to soak for 30 -60 minutes, to help prevent them burning while grilling.Shrimp Wrap 1Combine the oil, brown sugar and McCormick Caribbean Jerk Seasoning in a bowl and stir well.Shrimp Wrap 2Add in the shrimp and gently fold in until completely covered.Shrimp Wrap 3Cover with plastic wrap or a lid if the bowl has one.Shrimp Wrap 4Place in the refrigerator for 30 minutes to marinate.

When the shrimp is ready, thread onto the skewers.

Place onto a prepared medium-hot grill.

Cook on one side for 3-5 minutes; or until pink.Shrimp Wrap 5Turn and cook until cooked through and pink.Shrimp Wrap 6Allow to cool slightly and push off skewer; you are now ready for recipe below.




Ingredients for Shrimp Wrap & Mango Salsa:

Grilled shrimp Mango salsa, purchased or homemade (I used purchased from Costco for ease and I really like that brand)

Large tortilla wraps

Romaine lettuce, chopped into large bite sized pieces, washed well, dried (I used my salad spinner)

 

Directions for Shrimp Wrap & Mango Salsa:

Place a large tortilla down on a plate or cutting board.

Lay a good amount of lettuce down off the center slightly.Shrimp Wrap 7Spoon desired amount of pre-made Mango Salsa on top of the lettuce.

This Easy Decadent Chocolate Mousse Cake is one of the most popular recipes at A Mother’s Shadow and at my home too.  And there’s good reason – it’s so moist, flavorful, chocolaty and just amazing!

I kid you not, this Easy Decadent Chocolate Mousse Cake is superior and you’ll be asked for this one repeatedly.

And guess what?

You won’t mind making it time and again because it’s THAT good and SO easy since it starts with a cake mix – but NO one will ever know because I have a secret trick to show you for making this Easy Decadent Chocolate Mousse Cake super moist and decadent. 

For an exceptional dessert, add some fresh fruit to the plate.  If you are looking for a spectacular gourmet meal for a special occasion, or just because serve after these Lasagna Roll Ups.  




Easy Decadent Chocolate Mousse Cake

Ingredients:

1 package chocolate cake mix  

14oz. can sweetened condensed milk

2  –  1 oz. squares of unsweetened chocolate, melted – but warm to the touch, not hot

½ cup cold water

1 (3.9 oz.) package, instant chocolate pudding mix

1 cup heavy cream, whipped

 

Directions:

Preheat oven to 350 degrees.

Cut a piece of parchment paper the size of the pan.

Spray the pan with release, then put in parchment paper and coat the entire pan with the parchment with spray release.Decadent Chocolate Mousse Cake

Prepare and bake the cake mix according to package directions in the prepared pans.Decadent Chocolate Mousse Cake

When the cake is cooked through, take it out of the oven out and allow it to cool on a rack for 5 minutes.

Cover the baked cake with saran wrap. This step keeps the cake incredibly moist. Decadent Chocolate Mousse Cake

When cake is completely cooled, place pieces of waxed paper or parchment on a serving plate.Decadent Chocolate Mousse Cake

Place cake on top of the pieces of paper, in the center of the plate.Decadent Chocolate Mousse Cake

 




Now, melt the chocolate until it’s melted but not hot.Decadent Chocolate Mousse Cake

In a large bowl, with a mixer beat together the sweetened condensed milk and melted chocolate.

Gradually stir in the water, then instant pudding and beat until smooth.

Chill the mixture for about 10-30 minutes or just until set enough to spread.

Remove the chocolate mixture from the refrigerator and stir to loosen.

Fold in the cool whip type whipped cream and return to the refrigerator if needed until set up enough to spread creating a frosting mousse.Decadent Chocolate Mousse Cake

Place one layer of cake onto a serving plate Top it with approx.  1 ½ cups of the frosting mousse.Decadent Chocolate Mousse Cake

Frost the cake, covering the sides and top with the rest of the mousse.

Refrigerate until serving, along with any leftovers.

Optional: Garnish with fresh fruit or chocolate shavings.

French Palmier cookies made special for Valentines

Biting into one of these not too rich, but multiple layers of  awesomeness Easy Sweetheart French Palmier Cookies are…well, it’s on it’s way to being in love  😛 

But how can you get one you ask?

Do you live by a gourmet bakery?  It’s not convenient for me to get out to one all the time….

Do you have the moolah to purchase French Palmier Cookies anytime you want from the bakery? I don’t either….

Would you like me to show you how to economically and easily make these French inspired Easy Sweetheart French Palmier Cookies from puff pastry? 

Don’t let the pastry part scare you.  You keep it in your freezer to bake up anytime you want to impress your family or guests with these Sweetheart French Palmier Cookies, even if it isn’t Valentines.

These cookies are so delicate and incredibly tender, and with this little trick of making them into a heart shape, they are perfect for guests, family and friends as gifts! 

Believe me, these delicious  Easy Sweetheart French Palmier Cookies will make you everyone’s Sweetheart and they would be glorious put in little boxes or bags in:  THOUGHTFUL VALENTINE KINDNESS SWEETENS OUR DAY TOO

 





Easy Sweetheart French Palmier Cookies

Ingredients:

1 package of frozen Puff pastry, defrost according to directions on the box. Be very careful not to let the dough come to room temperature

1/4 to 2/3 cups granulated sugar, may need more or less

Pink chocolate buttons/drops/melts

Sprinkles, if desired  

 

Directions:

Heat oven to 350 degrees.

Line 2 baking pans with parchment paper.

On a clean counter or cutting board,  liberally sprinkle with granulated sugar.

Take ONE of the thawed puff pastry sections out of the package (the box comes with 2 sections) and lay it on top of the sugar.

Sprinkle the pastry  liberally with more sugar.

Roll the pastry into a rectangle of just over an 1/8″ thickness.

Working from a long side, roll it together, not tight, but snug to the middle.

Repeat this with the other side, so that both rolls meet in the middle.

Mark at 1/2″ then slice the puff pastry.

Place the cookies onto the parchment, allowing space, about 2-3″ apart.

Loosen the middle of the dough and pinch the ends together to form a heart.

Bake for 15-22 minutes, depending on the size of cookies and your oven.

Bake to a light brown yet make sure the center of the cookies are baked through.

Remove from oven and place on cooling rack.  

You can use the parchment paper for another batch of these same cookies.

When the cookies are all baked and cooled, place about 1/2 cup of the pink chocolate melts into a microwaveable bowl.

Heat for 15 seconds,

Stir well.

Continue this process for 10 second intervals until the chocolate is smooth and warm to a bit more than a baby bath temperature.French Palmiers

Spread the cookies with the melted chocolate, all or half, as desired.

Allow chocolate to set up.

Store in an air-tight container. Use within 3 days.

Valentines Sweetheart Muddy Buddy Chex Mix

 Ingredients:

4 cups Rice Chex cereal 

1/2 cup vanilla baking chips 

1/2 cup peanut butter baking chips 

1/2 cups powdered sugar

1/3 cup red, white and pink M&M’s  


Directions:

Place cereal in a medium bowl.

In a small microwavable bowl place the vanilla chips and peanut butter chips. Microwave the chips for 20 seconds, stir, continue this process until the chips are smooth and completely melted and the temperature a bit warmer than a baby bath.Sweetheart Muddy Buddies 1Pour over the Rice Chex cereal and stir gently, until evenly coated.Sweetheart Muddy Buddies 2In a gallon sized zip lock bag, pour in the powdered sugar.Sweetheart Muddy Buddies 3Add in the coated cereal, seal the end and shake gently to coat all the cereal evenly.Sweetheart Muddy Buddies 4Pour out onto a piece of waxed paper or parchment to set up.Sweetheart Muddy Buddies 5Pour into a large bowl and add in the M&M’s, stirring very gently to distribute evenly.

 Hey busy mom’s here is a great last minute treat for the kiddos to take to school, you or your sweetie to take to the office or to the neighbors. Also PERFECT way for your family to spend a little time together making and decorating these together as a treat or dessert!




Easy Valentine Cookie Pops

Supplies:

1 package Pillsbury Ready to Bake refrigerated sugar cookies (makes 24 cookies)

24 pop-sickle sticks/craft sticks – wide or narrow

1 container Pillsbury readymade frosting

M&M’s, candy,

Wilton sprinkles or other brands, whatever you desire for decorationsValentine Cookie Pops 1




Directions:

Heat oven to 350 degrees, according to cookie package directions.

Prepare pan, using parchment if desired. Again, according to cookie package directions.

Take one piece of the cookie dough and using a pop-sickle/craft stick place it into the center and push in about 2/3 of the way through.Valentine Cookie Pops 2Place 6 cookies with sticks alternating on cookie sheet as shown.Valentine Cookie Pops 3When cookies are cooked, allow to cool. Healthy Lentil Soup

Simple Healthy Lentil Soup

This soup is wonderful!   It is very economical, healthy, gluten free and easily made vegetarian.  

Serve with my Whole Wheat Muffins for a tummy pleasing meal.




BEST Ever Lentil Soup

Ingredients:

8 cups water, more if needed

2/3 cup lentils

1/2 cup brown rice, uncooked

1 tsp garlic powder 1 green or red bell pepper, chopped

3 vegetable bouillon cubes (Knorr, or equivalent)

1/2 tsp. dried thyme

1/2 tsp. dried oregano

1 tsp. dried basil

1 Tbl. soy sauce

1/2 tsp. Emerill’s or seasoned salt

1/2 tsp. smoked paprika, optional

1 Tbl. balsamic vinegar

1 lb. carrots, chopped

2 celery ribs, chopped

1 medium onion, diced

2 bay leaves

1 tbsp Worcestershire sauce Splash with Texas champagne (hot sauce)

1 Tbl. dried parsley


Directions:

Do not peel carrots it retains more vitamins.

Slice them about 1/2 inch thick.  

Slice the celery about 3/4 inch thick.

Chop the onions.

In a large stockpot, combine all ingredients and bring to a boil. Lentlil Soup 1Reduce heat and simmer, covered, for 45 minutes or more until the lentils, vegetables and rice are tender.

Add more liquid if needed. Lentlil Soup 2Serve.
