Low Fat Key Lime Dessert

This Easy Skinny No Bake Key Lime Dessert is so full of flavor you’d never guess it’s low in fat, calories and even considered a healthy dessert. 

This elegant guilt-free Key Lime dessert, will completely satisfy your craving for something wonderful, with its slightly tangy key lime flavor, countered with the right balance of sweet. 

The creamy silky smooth chiffon Key Lime filling sits on top of a bed of crunchy graham cracker crumbs, to give a perfect texture combination for your eating enjoyment.

This Easy Skinny No Bake Key Lime Dessert is a wonderful choice, whether it be a special occasion, or time to treat yourself because you deserve it!

Easy Skinny No Bake Key Lime Dessert

Ingredients:

1/2 cups fat free sweetened condensed milk

2 large uncooked egg yolks

2 tsp. butter, divided

1/3 cup bottled key lime juice (this is different from regular bottled lime juice and much less expensive from fresh key limes in most areas)

1/2 cup key lime flavored low-fat Greek yogurt

1/2 cup graham cracker crumbs

1 pinch salt

1/2 cup aerosol spray whipped cream

1 Tbl. lime zested, optional for presentation




Directions:

In a small, heavy bottomed sauce pan, combine milk and egg yolks; heat over medium-low heat,Low Fat Key Lime Dessert 1

Whisking continuously, until mixture begins to boil, about 5 minutes.Low Fat Key Lime Dessert 2Stir in 1 teaspoon butter and lime juice; pour into a shallow bowl and chill in refrigerator until cool, about 30 minutes.Low Fat Key Lime Dessert 3

Pour into a bowl or cup and chill in refrigerator until cool, about 30 minutes.Low Fat Key Lime Dessert 4




Meanwhile, melt remaining teaspoon butter in microwave in a cup or small bowl. Add graham cracker crumbs and salt to butter; gently mix.Low Fat Key Lime Dessert 5Fold yogurt into cooled lime mixture until just combined; Low Fat Key Lime Dessert 6

Set aside.

Low Fat Key Lime Dessert 7Line up eight 2-oz  glasses.

In each glass, layer 1 tablespoon crumb mixture (pressing down to form a “crust” with the handle of a spatula or other utensil) 

Add in 2 heaping tablespoons key lime pie filling

Top with 1 tablespoon whipped topping and garnish with lime zest if desired.

Yields 1 glass per serving.

Guiltless Full Flavor Pizza

Pizza without the guilt, but all the flavor

I love a good piece of pizza BUT I do not like all the extra calories I have to work off.

So to the rescue is this pizza and it is sssooooo GOOD! So often the ‘low fat’ versions are – well – kinda icky.  But not this pizza.

Really, you can trust me on this one.  It’s not only low in fat, less calories, it’s figure friendly too, and best of all……dum, dum, dum….it actually fills you up!

Give it a try tonight.  Oh, and by the way, this skinny version pizza that’s packed full of flavor, is so quick and easy, you will make it often – I do!




Guiltless Full Flavor Pizza

Ingredients:

Pita Bread, whole wheat or white

Your favorite pizza sauce

1 slice smoked provolone cheese per pizza or string cheese (the string cheese does NOT melt as well and was the same points in WW as the slice of smoked provolone,- I preferred the provolone)

Portabella mushrooms and 3-4 shallots; see instructions below

Spinach

Roasted Red Bell Pepper, bottled or click HERE for a recipe to easily roast your own peppers

Optional additional ingredients: 

sauteed onions, sliced olives, turkey pepperoni



Directions:

Slice mushrooms into thick slices.Guiltless Pizza 2Heat 2 Tbl. butter flavored olive oil or butter (may need a bit more if too dry to saute) over med-high in a skillet.  Add in the mushrooms and diced shallots; cook until almost tender. Guiltless Pizza 3Then add in 2 tsp. sugar and 1-2 Tbl. balsamic vinegar, to your taste.  Cook until the mushrooms are cooked through and glazed.  Set aside to use on the pizza.Guiltless Pizza 4



 

Heat oven to 375 degrees.

Place a pita bread on baking sheet. 

Spread pizza sauce evenly over the pita.

Break up cheese slice to cover sauce.

Lay spinach leaves to cover the pizza well.Guiltless Pizza 5Spoon mushrooms over the pizza. 

Top with sliced roasted red bell pepper.Guiltless Pizza 6Bake for 8-12 minutes, just until cheese is melted and ingredients are heated through.Guiltless Pizza 7

These Guilt-Free Salted Dark Chocolate Tartlets can be described as decadent, intense, creamy and rich.

Guilt-Free Salted Dark Chocolate Tartlets

Ingredients:

15 mini phyllo tartlet shells

1/4 cup low-fat milk

1 tsp. butter

3  1/2 oz.   60-69% dark chocolate, chopped (about 3/4 cup)

1/2 tsp. vanilla

1/8 tsp coarse sea salt

– optional Aerosol whipped cream  




Directions: 

Preheat oven to 350 degrees.

Place phyllo shells on baking sheet and bake about 6-8 minutes until lightly crispy.Guilt Free Intense Chocolate Tartlets 1Chop the chocolate in a food processor, or by hand.Guilt Free Intense Chocolate Tartlets 2Then a small saucepan over high heat, heat the milk and butter, stirring constantly until the milk boils and the butter melts. 

Reduce the heat to low. 

Stir in the chocolate and vanilla extract until combined.Guilt Free Intense Chocolate Tartlets 3Let the  chocolate mixture cool slightly, about 2-3 minutes.Guilt Free Intense Chocolate Tartlets 4Evenly divide the chocolate mixture among cooked phyllo shells. 

Sprinkle the tarts with the sea salt, very sparsely

It’s easier to add then take the way salt. 

We decided the 1/8 tsp was way too much, though that was the original recipe.

3-4 grains of salt on each tartlet is plenty.Guilt Free Intense Chocolate Tartlets 5Chill until the filling sets up; about 10-15 minutes. 

Top each tart with a spray of whipped cream just before serving.

Pasta with Fresh Garden Vegetables

This is a fabulous summer that is quick, filling and low calorie, particularly if you use a whole grain pasta.  Take advantage of the fresh summer vegetables, garden herbs and enjoy how quick and easy this comes together. 




Quick & Healthy Garden Vegetable Pasta

Ingredients:

1 Tbl. olive oil

1 tsp. sugar

1 Tbl. chopped garlic or 1 bulb roasted garlic – click HERE for my easy to follow tutorial to roast garlic

1 small onion, chopped

1 cup diced zucchini

3 cups fresh tomatoes, chopped

2-4 Tbl. fresh basil, chopped*

¼ tsp. coarse ground pepper

1-2 Tbl. sundried tomato pesto (see my tutorial to make your own sun-dried roasted tomatoes  HERE or use store-bought)

1 Tbl. red wine vinegar

1 Tbl. balsamic vinegar

grated fresh Parmesan or Romano cheese

1 lb. thick spaghetti, or similar pasta


Directions:

Fill a large pot with water for pasta, bring to boil.

Add pasta and cook till al denta; drain and set aside.

In a large pan sauté the onion until almost translucent.

Add in the sugar.Garden Vegetable Pasta 1Gently put the zucchini in the oil over medium heat and cook until crisp-tender.  Just until al dente. 
Garden Vegetable Pasta 2Add in the tomatoes, basil, pepper, tomato pesto/spread and vinegar’s.

Simmer for 2-3 minutes or until it is all is warmed through.Garden Vegetable Pasta 3Serve the sauce over cooked pasta and sprinkle with grated cheese.

*If fresh basil is unavailable, use 1 Tbl. dried basil and add in when you cook the garlic, onion and zucchini to give it time to soften and hydrate.
