Easy Strawberry Freezer Jam

Have you ever wondered how to make strawberry freezer jam?

Well, I have taught so many people how to make freezer jam that I’ve lost count now, and I can teach you too!

This type of  homemade Freezer Strawberry Jam is so delicious because it uses fresh fruit; making the taste absolutely phenomenal. 

Seriously,  there’s no comparison to the purchased type. As you spoon or slather on the taste of summer strawberries, you’ll think of relaxing sunshine and unwind while you enjoy, 

It’s best to make this recipe when the strawberries are peak freshness, in season and inexpensive and economical. 

I like to store the prepared jam in small individual freezer bags so I have it available anytime of the year. The containers and baggies I double protect by placing them in a larger bag, before storing in the freezer.

Here’s a nifty trick:  I keep a shoe box in my freezer where I place the freezer jam filled baggies which prevents them from sliding around and getting lost in the shuffle of any other food in the freezer. It also makes them easy to find and rotate

Another idea, is to make up batches of the easy no cook strawberry freezer jam, pour it into small containers with tight fitting lids, and freeze it (as directed on the package) to give as gifts for Mother’s Day, Father’s Day, birthdays — or just because. This delicious Easy Strawberry Freezer Jam would be so yummy on my moist homemade CornBread or for a special treat on the No Sour Dough Start Artisan Bread , now that would be amazing! Let’s make jam!!!




No Cook Strawberry Freezer Jam

Ingredients:

1 box of pectin. 

2 quarts of strawberries *disclaimer:  If any of the berries look like you will have to trim off spots, or areas that are not ripe, buy a bit more.  If you have extra berries….nummy, you get to eat them!  (check on the box/instructions of pectin for amount to be sure)

4 cups of white sugar (again, check the box/instructions of the pectin)

Containers with tight fitting lids  (disposable or even glass jam jars would make darling gifts) that hold 1/2 cup to 2 cups / zip lock freezer baggies. 




Directions:

Wash and dry the containers you have chosen; not necessary with new freezer baggies. Easy Strawberry Freezer Jam

Cut the strawberries into large chunks, if you like some texture to your jam. 

 

If you like a smooth jam, simply chop the berries really small.

Now, with the chunked berries, mash them a little with a potato mashers IF you like little bits of fruit in your jam.

In a separate bowl measure the exact amount of prepared fruit as called for in the recipe – don’t be tempted to add or decrease.

In another bowl measure the exact amount of sugar no less or no more – the exact amount called for.

This step prevents mistakes!

Stir the sugar into the prepared fruit, mix it well and let it stand for 10 minutes stirring frequently – no cheating here!   

Pectin, which is what causes the jam to set up, is in the box along with the instructions.

Take out the packet and pour it into a small saucepan adding in the required amount of water (which you will find on the instruction sheet in the box). 

The mixture will start out lumpy, but keep stirring until it comes to a boil on high heat.Easy Strawberry Freezer JamStir CONSTANTLY!!!  It burns easily and you don’t want to waste it. 

Boil, still stirring for 1 (ONE) full minute. 

Remove the pan from the heat and stir the pectin mixture into the fruit.

Stir constantly until the sugar is COMPLETELY DISSOLVED and no longer grainy, about 5 minutes.  

This is very important or your jam will ‘sugar’ and be grainy, very distasteful to eat.




Notice my little trick of lining a measuring cup with the baggie so I can fill it easily,

Pretty snazzy, right!

Fill whatever containers you desire. 

Disposable, baggies, glass… Make sure to date and label them. 

IMPORTANT STEP:  You must let the jam, in the baggies or containers sit at room temperature for 24 (count ’em 24) hours

This allows time for the sugar to completely dissolve and the pectin to do its work.

  • AFTER 24 hours, the jam is ready to eat, put in the freezer and take to someone who could use a little happiness.
  • Note:  When the jam is in the freezer, it never completely sets up hard because of the sugar content, so don’t worry when it’s not solid.
  • When taking the jam out of the freezer, allow it to thaw in the refrigerator.
  • Refrigerated jam will last up to 3 weeks and in the freezer for 1 year.
  • This jam is amazing in homemade shakes, on waffles or pancakes (click HERE for my recipe) on toast, you name it!

Sometimes we forget to take a thank you or host/hostess gift when invited to Thanksgiving dinner or the events surrounding it.

But what to take?  It’s just good manners and polite.

I like to take something useful….and hopefully that they want is preferred.

These DIY Stenciled Thanksgiving Kitchen Towels are perfect for everyone!

They are very easy to make and gorgeous too.

We have joined up with our friends over at STENCIL REVOLUTION for another fabulous project and I LOVE how this came together!

The towels we used are nice quality flour sack towels (I’ll give you the links), the paint does not wash out or fade when washed (at least in our experience) and the  stencils from STENCIL REVOLUTION are the BEST!  They have different sizes you can choose from because they are awesome like that, and in these two patterns they  offer at least two smaller sizes than what we used.

So on the towel you could use the stencil in the corner, or one side, both sides, two corners, all corners, or like we did by taking up pretty much the entire towel.  

Let me show you how we made these and what more of what they look like.

When you see these, you are going to want to make them for everyone, not just the person making the turkey:)

High Quality Flour Sack Towels like these, preferably 28″x 28″ (these have a loop for hanging) meant for holding paint, embroidery, etc.

Plastic Paint Tray Palettes like THESE

Cover your table or work area with an old bath towel as we did, or disposable table covers

Cut a long length of parchment paper, plenty to go the length of the stencil and place on top of your towel or table cover where you are going to work.

Begin as with the other towel by placing down a towel or disposable table covers

Cut two long lengths of parchment paper, plenty to go the length of the stencil and place side by side on top of your towel or table cover where you are going to work. 

Place the kitchen towel on top and then the stencil you are going to use.

Cleaning the STENCIL REVOLUTION stencils is a breeze.  

Simply scrub lightly with a soft cloth under running water.

Rinse well and dry.

If all of the paint does not come off, or the stencil appears stained, it is OK.  Our have been used over and over and over again, and they work perfectly!

Easy Refried Beans made in a Crock pot or slow cooker

Are you looking for the  BEST Crock Pot Refried Beans?

Not those flavorless, bland refried beans, like some canned ones, or those made with tons of lard.

These have really great depth of flavor, and the BEST part….

My easy Best Refried Beans creation are made in the crock pot!

I mean what can be easier than that?

And the result -every time I serve these BEST Crock Pot Refried Beans, I get rave reviews and so will you! 

I have easy to follow picture tutorials so you can easily make these BEST Crock Pot Refried Beans yourself and I’ll also tell you the trick to freezing them perfectly.

BEST Crock Pot Refried Beans

Ingredients:

1 lb. dry pinto beans (1 1/2 – 1 2/3 cup), rinsed, remove any shriveled beans or stones  

1/2 teaspoon salt

1 large yellow (best flavor for long cooking) onion, peeled and cut into chunks

2 Tablespoon garlic, chopped or minced

1 jalapeno or Anaheim pepper, seeded and chopped (adds flavor, not heat)  

—-

1/2 teaspoon salt

1 Tablespoon white vinegar

1 teaspoon balsamic vinegar

1/4 – 1/2 teaspoon cumin

1/8 – 1/4 teaspoon chipotle chili powder (or regular chili powder. However Chipotle adds a wonderful smoky flavor)

4 Tablespoon real butter (don’t skimp here!)

1 to 1  1/2  teaspoon chicken bouillon, or to taste

1/2 teaspoon Montreal steak seasoning 

 

Directions:

The night before  rinsed the beans in a colander, checking for  stones or shriveled beans.

Let sit large bowl and cover with at least 5 inches of water.

Let them soak overnight, or at least for 8 hours.

This is an important step.  

Why?

Because by soaking the beans and then rinsing them very well with water before proceeding; this cuts down dramatically on the gastrointestinal issues (aka gas) produced by beans.

After soaking the beans overnight, rinse them in a colander over and over with water a few times.

Pour the soaked and rinsed beans into a crock pot.

 

Next step

Prepare a Jalapeno or an Anaheim pepper.

Using  disposable gloves is a good way to cut up the peppers because it keeps the juices/oils from the peppers off of your fingers/fingernails; which can really burn your eyes or sting your face or anywhere you touch.

Removing the seeds and membrane, which will leave the flavor, but not the heat.

In the crock pot, along with the rinsed beans, add in the salt, cut up onion, garlic and jalapeno or Anaheim pepper.

Next Step

Cover  the bean and vegetable mixture with approximately 4-5 inches of water.  

Place on the lid and set to cook for 4-6 hours on high, or 8-10 on low.

The time of cooking will vary depending upon the age of the beans. 

Be sure to check on your beans periodically to see if more water needs to be added.

Again, this depends on your beans.

When the beans are tender to the bite, then pour into a colander which is set INSIDE of a large bowl and drain to reserve the bean juice. 

Or scoop out the liquid with a spoon and save.  ***VERY IMPORTANT STEP  You want to SAVE the liquid the beans have been cooked in!!!

Next Step

  • Place the drained bean mixture into a food processor. 
  • A blender will make a very smooth bean, whereas a food processor will allow you to make the beans with texture if desired.
  • If you prefer really chunky re-fried beans, use a potato masher instead of a food processor.

Add in the ½ tsp. salt, vinegar, cumin, chipotle chili powder, REAL butter, bouillon and Montreal steak seasoning.  (I like to 1 1/2 times the seasonings, but then I love a punch of flavor.  I recommend making as directed in the recipe though the first time, and then adjusting to your taste.)

Give it a whirl, then add in a bit of the reserved bean juice; just a small amount at a time until the texture is the way you prefer.

Serve warm.

TIP:  Refried beans freeze very well.

Soon into freezer baggies or containers when cooled and place in freezer.

SAVE some of the bean juice and  freeze in a separate freezer baggie or container.

When thawing the beans, also thaw bean juice and add to beans if they seem dry after freezing. They will taste like the day you make them – or better since the flavors have had time to marry.  ENJOY!

Here BIRDIE, birdie!

Spring is here and time to get out and enjoy the season as friends and family. 

I have simple binoculars the kids can make out of toilet paper rolls to go bird watching.

Also EASY and FUN bird feeders to bring the feathered friends to your yard that the kids can make as a family activity, or craft time.  You’ll love how easy they come together.  Then watch all the different kinds of birds that come to eat.  If you are looking for more ideas, this ORANGE BOWL FEEDER is great, and so is this ICE CREAM CONE FEEDER

While making the bird feeders and binoculars take the opportunity to teach about the different types of birds that are in your area.  You could look at the library, or pictures on the internet to show pictures, flight patterns to older kids and really have some FUN!    

 

 

 

 

Cheerio Chain Bird Feeder

Supplies:

  • Pipe Cleaner
  • Cherrios
  • Ribbon, yarn or string

 Directions: Have children thread cheerios onto pipe cleaner, leaving room to twist ends together to form a circle. Repeat, except loop through other circle before twisting ends, forming a link.

Do as many links as desired. Tie a ribbon, yarn or string onto an end loop and hang.

Bagel Bird Feeder 

( from:  The National Audubon Society)

Materials: • stale bagels • peanut butter • bird seed • string or yarn

Tie yarn or string around the bagel.

Slather stale bagel with peanut butter.

Roll in birdseed.

Hang from a tree.

TIPS: • Place your bird feeders in places that aren’t too windy, have good cover nearby, and minimize other hazards. 

Fill your bird feeders with the amount of food that can be eaten in 2-3 days. 

Keep your feeders and feeding area clean by raking up spilled seed under them and wiping off permanent feeders.

Provide water at your feeding area. Place a clay saucer that’s at least 24 inches on a low stump or on the ground, and fill it with about 1 1/2 inches of water.

Refill it every few days.

Glue rolls together.

My family wants this Easy Pizza Pasta Bake in our regular meal rotation and I like to include it because it’s so simple.

The flavors come together in a really complex way to showcase this dish that is not just ‘a casserole’ but a WOW, what’s in that AMAZING pasta!?!

It’s a family friendly meal that’s a perfect choice to take to a friend or neighbor in need.  You can read more about that  in What You Need To Know About Taking In A Meal They Will Want To Eat

Easy Pizza Pasta Bake

Ingredients:

16 oz. Rotini pasta cooked (I really like Barilla pasta)

2 Tbl.  oil of your choice; choose one that has a very mild flavor, or no taste at all

2 – 23.9 oz. jars of your favorite pasta sauce  – I used Prego Italian Sausage & Garlic for this recipe

1/2 cup water – divided between the two bottles to rinse the rest of the sauce out of the bottle

2 teaspoons balsamic vinegar

3 teaspoons oregano,  leaf (not ground)

6 oz. can whole olives, sliced (hold out 1/8 cup for the top)

3 cups shredded Mozzarella cheese (divided)

4-6 oz. pepperoni, quartered (except hold out approximately 20 whole pepperoni for the top)

1/2 cup shredded fresh Parmesan cheese

Directions:

Preheat oven to 425 degrees.

Coat your 9″ x 13″ baking dish with spray release.

Bring a large pot of salted water to boil; following instruction on the package,A hearty casserole full of pizza flavors from the hearty sauce, pepperoni, olives and cheese all mixed into pasta.Cook the pasta to al dent. Meaning it still has a little ‘bite’ to it, and is not mushy or cooked quite all the way through.

When the pasta is cooked to al dente, drain in a colander, rinse and pour the 2 Tablespoons oil of your choice over pasta, gently mix it over all of the pasta with your hand or a spatula to coat it all evenly.  Allow the coated pasta to sit in the colander while you prepare the sauce.A hearty casserole full of pizza flavors from the hearty sauce, pepperoni, olives and cheese all mixed into pasta.

Rinse out the pan and put it back on the stove.

Into the pan, pour in:

2 jars of pasta sauce

In each bottle of pasta sauce pour 1/4 cup of water and shake well to get all of the pasta sauce rinsed out. Pour this into the pan with the pasta sauce.

Add in the balsamic vinegar, Oregano, sliced olives (reserving about 1/8 cup for the top), fresh Parmesan cheese, TWO cups of the mozzarella cheese, and the quartered pepperoni (holding out approximately 20 whole pepperoni for the top)

Bring to a simmer and cook on low for 2 minutes.

Add in the pasta and stir GENTLY.A hearty casserole full of pizza flavors from the hearty sauce, pepperoni, olives and cheese all mixed into pasta.

Pour this mixture into your prepared baking pan.A hearty casserole full of pizza flavors from the hearty sauce, pepperoni, olives and cheese all mixed into pasta.

Top with the rest of Mozzerella cheese – 1 cup. 

The reserved whole pepperoni and the 1/4 cup sliced olives.A hearty casserole full of pizza flavors from the hearty sauce, pepperoni, olives and cheese all mixed into pasta.

An easy, but gourmet cheese ball in taste and flavor

Asiago Cheese Ball With Roasted Garlic

Ingredients:

2 heads of garlic, whole heads – check for softness or bruising

Olive Oil

8 oz. cream cheese, softened

1/2 cup sour cream

1  1/4 cup Asiago cheese

1/2 cup toasted pecans, chopped (2 oz.)

1/4 cup finely chopped parsley

1 teaspoon balsamic vinegar

 

Directions:

First begin by roasting garlic.

Preheat oven to 425 degrees and follow instructions HERE

Meanwhile toast the pecans in a dry fry pan over medium heat, stirring constantly so the nuts toast and do not burn. 

Continue cooking until the nuts are a light brown then take off the heat.

Once the garlic has cooled, squeeze the cloves in a food processor.

Add in the softened cream cheese, sour cream and grated Asiago cheese.

Mix until creamy and combined.

Remove the cheese mixture to a sheet of plastic wrap.

Cover it completely with plastic wrap.

Form a ball.

Chill for 2 hours or until firm enough to to hold a ball.

When ready, on a plate spread evenly the chopped parsley and completely cooled toasted nuts.

Unwrap the chilled cheese mixture and place onto the parsley nut mixture.

Using your fingers, gently turn, or place the nut-parsley mixture all over the cheese ball to cover as much and evenly as possible.

Chill for one hour before serving.

Keep covered and in the fridge.

Serve with crackers.

20 Minute Table Runner

This EASY 20 Minute Table Runner is a great gift, way to decorate your home or to gift!

Sewing is an important life skill.

It’s so satisfying to make something useful and feel accomplished in learning something new.

After you make this EASY 20 Minute Table Runner, you will want to make them for wedding and shower gifts, Christmas gifts, birthdays and to decorate for holidays.

They are economical depending on the fabric you choose of course, and super fast with these simple step-by-step instructions.  

What if you haven’t sewn much, is this project for you?

YES!

This EASY 20 Minute Table Runner will take a newbie about an hour (a more experienced sewer about 20 minutes) to make by following my tutorial. 

 




Do not be intimidated by all the pictures and steps, I just wanted to make sure you could easily make this amazing table runner.

EASY 20 Minute Table Runner

Supplies:

10″-12″ width by 42″-45″ length of a theme print of fabric

18″ width by 42″-45″ length of a coordinating print of fabric

matching thread

2 coordinating buttons or any embellishment you choose

 

Instructions:

Step 1 – Cut your fabric to size indicated above20 minute table runnerStep 2- Place fabric together, right sides together20 minute table runner

Step 3 – Stitch the long edges together using 1/2″ seam20 minute table runnerStep 4 – Turn right side out so you have a long tube.

20 minute table runnerStep 5 – Lay flat on the ironing board and press so that the theme print is bordered evenly on both of the long sides with the coordinating print.20 minute table runner

Press well.  This is a secret to all professional and polished looking items.  The ironing – do not skip on this step.

20 minute table runnerStep 6 – Trim the short ends of thread, or uneven fabric.20 minute table runnerStep 7 – Fold fabric in half lengthwise with the theme print out.

Make sure you are trimming threads as you go! 

VERY IMPORTANT or your work looks sloppy.20 minute table runnerStep 9 – Take a small snip off the corner.

Press the seam open.   Again, very important to iron!

Turn the seam inside to form a point.  I used the scissors only to hold it open for you to see what it looks like while turning it.

20 minute table runnerStep 10 – Here I did gently use the scissors to help me make the point.

Then use the seam ripper to pull it out very carefully to make a nice point.

13- Press well the entire runner again and voila, you are done!

My good friend Dorthy has THREE perfect cards to make for men that is not fluffy or feminine.

These are economical, personal and easy to make up a few while you’re at it.

Manly Birthday Card

Supplies:

1    8 ½” cardstock

18 – 20    1  5/8” X 1 ¼” printed and solid papers to coordinate *

Paper glue (glue stick is fine for this project)

Paper cutter or ruler and scissors

Printed greeting or purchased sticker


Directions:

Cut out all pieces. Even though this card is easy, it looks better if the pieces are cut evenlybday card 1

 

Fold card stock in half

Choose nine pieces of paper and arrange them on the front of the card being careful to space them evenly. You may have to trim a little bit here or there. Glue down. At this point you may have to cut the card to make it even.

Choose three or four more pieces of paper and cut them to 1” X 1 3/8” and place them on top of the bottom layer.

I did three and did a diagonal from top to bottom. You can do whatever you wish. Glue these down centering them over bottom layer.

Choose three or four more and cut them to ¾” X 1 1/8” and place them over the second layer. Glue down.

Print your greeting (I used Jokerman 22) and glue on the front of the card or place your purchased sticker on the front. I tore mine instead of cutting it.bday card 2
