Panini, treats, and food for Halloween

A buffet to satisfy everyone on Halloween

The Halloween Buffet and Panini Bar turned out scrumptious and fabuous thanks to my daughter-in-law Ashley.

She helped me set up the buffet table and it looked grand!

Thank you so much Ash for your time and very cool decorations. It make it all come together boo-tifully!

On Halloween night, at our place, family and friends drop by to show off their kids, or grand kids, their costumes, and visit for a spell.

It is usually the tradition to have chili, soup, stew or even a pizza decked out to look like a pumpkin.

But I wanted something that as people came by, they could make their own food to their liking. 

See, something went terribly wrong, and a few of my kids do not like soups or pasta (I know….WHAT?). So a panini bar fits everyone just right.

This is family friendly to the best!  There’s something for everyone.  Healthy food. Have gluten free bread on hand.  People can make their  sandwich hot or cold.  And best of all….you get to relax and enjoy the company!

A taco specially made for Halloween festivities

Halloween Spidey Tacos are to the rescue!

With Halloween season it’s sweets and rushing around to lots of fun events.

So if you are looking for a meal idea that is festive, easy, simple and fast, I’ve got you covered!

This is a meal the kids and family can help make too.

Halloween Spidey Tacos are delicious, in expensive and everyone likes a taco. Make some for your family or a party!

 



Halloween Spidey Tacos

Ingredients:

LARGE/JUMBO olives, 2 per spider

Corn tortilla shells that stand on their own

 

Taco ingredients:

Cooked ground beef, or your preference of meat

Taco seasoning if desired 

Lettuce

Tomatoes

Grated cheese

Sour Cream  





Directions:

Cut one olive per taco, in half, then each half into 4 slices to make 8 ‘legs’ per olive.

Build your taco as desired.

Then place one large/jumbo olive inside the taco for the body.

Panini Bar for guests to make their own hot sandwiches

sDo you want a break from soup, chili or the ‘usual’ Halloween fare?  Halloween Make Your Own Panini Bar is a great option!

This is a perfect way to allow your guests as they come Trick or Treating to make their own, hot sandwich.

And you can enjoy the party since all the prep work is done ahead.

It’s easy, put out what you’d like for available ingredients and enjoy the festivities!

Halloween Make Your Own Panini Bar

Ingredients:

Deli meat: turkey, ham, roast beef; any of your choice

Sliced cheese: provolone, cheddar, swiss; any of your choice

Small Ciabatta rolls, or any crusty rolls work really well.  Small is best to avoid waste. It’s also a good idea to have gluten free variety if you know that will be useful.

Condiments: variety of mustards, mayos and other sandwich toppings 

Lettuce, sliced tomatoes, sliced onions – as desired

Panini Maker or Press 

 

Directions:

Have the ingredients ready for people to make their own panini.

Make sure the meat, cheese and condiments are over ice, or kept chilled – never left out to spoil during the course of the evening or party.

When people arrive, or are ready to eat, they can assemble their panini to their liking with the meat and cheese they want.

Simply put it together as desired, then into the panini maker/press and heat completely through.

This is what we did: 

  • There were a variety of the small bags of chips  available to suit everyone’s choice.
  • Cups with ranch dressing and carrots were all ready to go; you could also include celery sticks.
  • Cups of green and purple grapes were handy to snag as guests helped themselves.
  • I purchased the smaller Ciabatta buns in the store to avoid waste.  You can use any denser type roll you like.
  • For the meat I put out deli sliced ham, turkey (forgot to include the roast beef in the pic, oops) and also precooked bacon strips. Keep on ice if it is to stay out for an extended length of time.
  • Cheeses are so varied, but I settled with cheddar and Munster.
  • On the tray for condiments included:  fresh spinach leaves (I like it better than lettuce on these), thin sliced red onion, mild pepper rings, roasted red bell pepper, and sandwich spreads (you can purchased these from the store *if mayo based keep on ice if out for an extended amount of time).  My Jalapeno and Red Pepper Jelly is AMAZING and my favorite condiment on a panini and so many other things. 

As guests put their sandwich together, they could eat it cold or heat/grill it on the panini maker and ta-da!  Magically they had their own scrumptious meal to eat as they visited, or to take on the go.

Just use whatever is available in your price range and relax, they’ll make their own dinner – which is always the best part!!!

It’s delicious and so festive, this Quick and Easy Chocolate Covered Halloween Popcorn makes a great gift or treat for anyone.

Ingredients:
10-14 cups of popped popcorn, depending on your taste 
12 oz package of Wilton Light Green Chocolate Melts
12 oz package of Wilton Orange Chocolate Melts

Directions:

Spread out about 3 feet of parchment paper on the table or counter.

Pop the popcorn and remove all the un-popped kernels as best you can.

In a microwaveable bowl, pour in the green chocolate button melts.

Cook in the microwave for 20 seconds and stir.

Continue this until the chocolate is melted completely and warmed through.

Be careful not to warm it too fast, or it will burn.

Pour the warm chocolate over the popped popcorn.

Stir gently until well coated.

Spread the coated popcorn onto the parchment so it is single layer thick.

Now, warm 1/2 – the entire bag of the orange chocolate button melts in a microwave-safe bowl; depending on how much you want to use.

Repeat the process for the orange chocolate as you did the green – using the same care not to burn.
Drizzle, with a spoon, the melted orange chocolate, over the top of the green coated popcorn in a random pattern.
Allow this to set up completely.

When the chocolates are cooled and set, lifting the parchment, move it from beneath to help crack the popcorn into sections.

 I have struggled with making caramel apples for years, actually decades.  I do not like to bite into it and have the caramel peeling off, and finding it is thick and hard.
Nor do I like it when the caramel all runs off the apple either. I want a nice layer of soft, yummy caramel covering the apple, and this is it!  
I’ll show you how you can make AMAZING Caramel Apples too in easy to follow tutorial.



Successful AND Easy Caramel Apples
Ingredients:
5-6 medium apples Craft sticks or wooden round sticks (usually found in the candy making section)
1 package 12-14 oz. wrapped caramel squares
1 Tbl. water 1 tsp. vanilla  
Toppings of your choice.

Suggestions:  crushed graham crackers, chopped nuts such as peanuts, small candies, chocolate chips or buttons: white, milk and dark if desired. 




Directions:
PREPARE AHEAD  and read entire recipe before beginning.
Wash your apples, rubbing them with a clean cloth to get off the waxy residue. This is VERY IMPORTANT!Easy Caramel Apples 2Push the sticks into your apples, place in a cake pan or flat bottomed container and put in the freezer for 30 minutes.  CRITICAL step!  
Why?  Because the cold apple helps the caramel coat perfectly and set up since the apple will be cold and the caramel warm.
Now, when the apples are nice and cold (not longer then 30-40 minutes though or you will have frozen apple pops!) line a cookie sheet, pan or plate large enough to hold the apples with tin foil and coat well with non-stick cooking spray; set aside.  This will prevent the caramel from sticking so you can lift it to dip in chocolate or to eat. Easy Caramel Apples 3When the apples have been in the freezer for approximately 30 minutes (remember not longer), begin making the caramel coating.
Unwrap the caramels and place in a saucepan. 
Add in the water and vanilla. Easy Caramel Apples 4Over medium heat, stir constantly until the caramels are completely melted.Easy Caramel Apples 5


Taking one apple at a time, roll it in the melted caramel sauce, using a spoon or spatula to help cover the apple.Easy Caramel Apples 6Twirl the apple, turning upside down to allow the caramel to distribute evenly and coat evenly.Easy Caramel Apples 7If you want to dip your apple in coatings now, instead of dipping in melted chocolate, this is the time to do it.Easy Caramel Apples 8


Coat all the apples in caramel and place them in the refrigerator to chill and set up while melting the chocolate. 
To melt the chocolate, whether using chips or buttons, place in a microwavable bowl and microwave for 30 seconds. Easy Caramel Apples 9Microwave again for 20 seconds, stir and continue this process until the chocolate is melted and smooth.
Be careful to cook in small intervals and stirring to prevent burning chocolate.Easy Caramel Apples 10Take the apples out of the fridge.
BIG TRICK AND IMPORTANT! Spray your hand with cooking spray.  Easy Caramel Apples 11Mold the caramel back up onto the apple smoothing as needed. Easy Caramel Apples 12

After molding any caramel that needs to be, now dip the caramel apple into the white/ dark or milk chocolate (you want the chocolate warm, but not hot so it can coat and set up). 
You can coat it completely, or just the bottom, whatever your heart desires. Easy Caramel Apples 14
Easy Caramel Apples 15 Dip into any of the coatings you choose.  
Set the apples back onto the sprayed tin foil to help it setup while you finish all the apples.
With any excess chocolate (melt more if needed) have at just warm enough temperature to be smooth and creamy, but not so warm it will not stay on the apple when piped. 
Spoon the chocolate into a small ziplock baggie and cut the very tip off at the corner. 
Now you can easily pipe the chocolate onto the top of the apples.Easy Caramel Apples 16

Chocolate with a bit of sweet, some pop and a little heat

 My friend Dorthy told me about a candy she had some time back and I just had replicate what I call Mysterious Halloween Candy Confection with sweet and heat.

This seemingly innocent chocolate candy is not what it appears to be.

Put a piece of this Mysterious Halloween Candy Confection in your mouth…..wait for it…and in a few seconds you begin to feel the popping on your tongue and the inside of your cheeks.

Wait for it….then a moment or so after that…the heat from the chipotle hits the back of your throat and warms it nicely. 

It’s fun, groovy and a perfect treat with a little trick. I’ll show you how to make this SIMPLE candy for not only Halloween, but it’s great for an April Fools trick too – just change the sprinkles!

Mysterious Halloween Candy Confection

Ingredients:

( if you’d like, simply click on the title or name of the product to easily check it out)

12 oz. white or chocolate melting chocolate:  such as Wilton candy melts OR chocolate chips

3  .333 oz packages or one  .75 oz package of any flavor of Pop Rocks candy

1/8 – 1/4  tsp. chipotle chili powder (1/8 tsp. gives a little heat in the back of the throat)

Halloween candy sprinkles  OR THESE for April Fools

Directions:

Line a cookie sheet or jelly roll pan with parchment paper, or lay a large piece out on your table or counter about 3 feet long.

Place the chocolate in a microwavable proof bowl

Heat in the microwave for 30 seconds.

Stir.

Microwave another 30 seconds and stir.

Repeat this process until the chocolate is melted and completely smooth.Mysterious Candy 5 Mix in the pop rocks.Mysterious Candy 6Mix in the chipotle powder.Mysterious Candy 7

Spread out the chocolate mixture evenly on the prepared parchment to about 1/8″ thick.

Cover evenly with the sprinkles.

Allow chocolate to set up in the fridge, or on the counter if it is cool enough.

When the chocolate is firm, break into pieces.

IMPORTANT TIP: Eat within 2 days for best effect from the Pop Rock candy because the effect diminishes the longer it sits.

Carrie’s Cold Apple Cider is one of my favorites:)

Now, I LOVE my Caramel Apple Cide but sometimes it’s nice to have a cold drink even in the winter.

 So, I set about making a family-friendly drink just in time for Halloween and I think you’ll LOVE it as much as we do!

 

Carrie’s Cold Cider

Ingredients:
1/2 gallon apple cider OR juice
6 oz. orange juice concentrate (1/2 can of frozen concentrate)
1- 1  1/2 cups water, to your desired taste
3 packets of dry apple cider mix
1 tsp. vanilla
1/3 – 1/2 cups sugar, to your desired taste

 

Directions:
In a large picture combine all the ingredients well.

Chill for at least 1 hour before serving.

It’s the very best if it sits over night.

I’ve got my EYE on YOU! 

Ok, ok, I know these are a bit ghoulish, but I do think food is a great way to have fun. 

These are easy and definitely an eye-stopper…alright, I’ll stop, heehee.  

I’ll show you just how quick these are to make and they would be great for an older kids party and fabulous for a teens party. It could be part of their activities to make make the cupcakes.  Be sure to freeze the cooked un-frosted cupcakes and let them frost them while frozen.  It’s much easier.  They will have a eye-poppin time…oohh I couldn’t resist:)

Ingredients:

1 Pillsbury Funfetti Radiant Red Cake Mix Ingredients listed on back of package, click HERE to go to the product

1 container of White Frosting

Red decorating edible gel   HERE is an option

Eyeball Candy decorations  CLICK HERE for these, OR these

 

Directions:

Heat oven to 350 degrees. 

Now we need to prepare our pan.

Find a glass or anything round that is approximately the same size as the bottom of the muffin/cupcake section of the pan.

Trace 12 onto parchment paper and cut out.


Coat the bottom of the cupcake/muffin section with non-stick cooking spray.

Place a round piece of parchment into the bottom and coat the sides and parchment well with non-stick cooking spray.

Mix the cake mix according to directions on the back of the package.

Pour into the cupcake/muffin tin, dividing batter between the 12 cups.


Bake according to directions on the back of the package.

When done, cool, then remove from tins.

Frost the completely cooled cupcakes with the white frosting.

TIP:  Freeze the cooled and baked cupcakes before frosting. Frost while frozen, it is much easier.

Color approximately 1/2 – 2/3 cup of the frosting to a deep red.

Place the red frosting into a sandwich sized baggie and clip the corner with a small cut.

Make the veins of the eyes with the red frosting.

Now for the fun.  

Center the eyeball candy in the center and that’s it!
