Granny Green St. Patricks PopCorn

St. Patrick’s Green Pop Corn is a fast, YUMMY green treat for friends or family that will make this holiday extra special. 
 Celebrate with this quick favorite St. Patrick’s Green Pop Corn also known as Granny Corn or Mother Goose Popcorn  
This scrumptious candy will bring back cherished memories of this old fashioned treat, or make new ones.  Every St. Patty’s Leprechaun will consider it a treasure, but one to share:) 

St. Patrick’s Green Granny, Sugar or Mother Goose Pop Corn


5 cups sugar
2 tsp. vanilla
1 ½ tsp. salt
12 oz. (1 can) evaporated milk
4 drops green food coloring

32 cups popped popcorn, place into a large bowl discarding any kernels that did not popPop corn


In a medium heavy saucepan over medium heat, combine sugar, vanilla, salt, vanilla, evaporated milk and food coloring. 
Attach candy thermometer to the side of the pan. 
This is important and be sure it is working properly – buy a new one if you have a question. 
Be sure the end of the candy thermometer; meaning the bulb does NOT touch the bottom of the pan, but that the bulb is completely down inside the mixture.St. Patrick's Pop Corn 1
STIRRING CONSTANTLY cook over medium-high heat until the mixture boils. 
When the candy comes to a boil, turn it down to medium; and continue stirring until the thermometer reaches 235 degrees.
Pour the candy mixture over the popcorn and toss lightly until it is completely coated.
Now, stir gently, bringing the candy mixture from the bottom up to the top of the popcorn on the top, completely coat all the popcorn.St. Patrick's Pop Corn 2In the beginning the candy coating on the popcorn will be shiny like this.St. Patrick's Pop Corn 3Continue to stir gently; pulling from the bottom to the top and in about 2-3 minutes – POOF and MAGIC happens!
The candy coating sugars to look like this and becomes that wonderful throw-back candy we can still  enjoy today.

4 cups Rice Chex cereal 

1/2 cup vanilla baking chips 

1/2 cup peanut butter baking chips 

1/2 cups powdered sugar

1/3 cup red, white and pink M&M’s  


Place cereal in a medium bowl.

In a small microwavable bowl place the vanilla chips and peanut butter chips. Microwave the chips for 20 seconds, stir, continue this process until the chips are smooth and completely melted and the temperature a bit warmer than a baby bath.Sweetheart Muddy Buddies 1Pour over the Rice Chex cereal and stir gently, until evenly coated.Sweetheart Muddy Buddies 2In a gallon sized zip lock bag, pour in the powdered sugar.Sweetheart Muddy Buddies 3Add in the coated cereal, seal the end and shake gently to coat all the cereal evenly.Sweetheart Muddy Buddies 4Pour out onto a piece of waxed paper or parchment to set up.Sweetheart Muddy Buddies 5Pour into a large bowl and add in the M&M’s, stirring very gently to distribute evenly.

Dorthy is helping us again! This notebook would be a great present for any occasion, depending on the paper you choose. Make one for every holiday and season!  An inexpensive, easy craft for teens, girls-day-out activity, a wonderful birthday or Mother’s Day gift – so many uses for yourself, or as a gift!  Mix and match papers from scraps you have and add a fun patterned pencil to make it even more special. 

DIY Covered Notebook

Take the 6×6″ piece of paper and lay it face down against the wire rings

Mark each hole with a pencil mark.DYI Embellished Notebook 5Draw a line 1/8″ from the top of the paper at the pencil marksDYI Embellished Notebook 6Using a small hole punch (not the regular size), punch holes at each pencil mark.

Make a small slit with scissors from the edge of the paper to the the hole you punched. Simple Healthy Lentil Soup

This soup is wonderful!   It is very economical, healthy, gluten free and easily made vegetarian.  

Serve with my Whole Wheat Muffins for a tummy pleasing meal.

BEST Ever Lentil Soup


8 cups water, more if needed

2/3 cup lentils

1/2 cup brown rice, uncooked

1 tsp garlic powder 1 green or red bell pepper, chopped

3 vegetable bouillon cubes (Knorr, or equivalent)

1/2 tsp. dried thyme

1/2 tsp. dried oregano

1 tsp. dried basil

1 Tbl. soy sauce

1/2 tsp. Emerill’s or seasoned salt

1/2 tsp. smoked paprika, optional

1 Tbl. balsamic vinegar

1 lb. carrots, chopped

2 celery ribs, chopped

1 medium onion, diced

2 bay leaves

1 tbsp Worcestershire sauce Splash with Texas champagne (hot sauce)

1 Tbl. dried parsley


Do not peel carrots it retains more vitamins.

Slice them about 1/2 inch thick.  

Slice the celery about 3/4 inch thick.

Chop the onions.

In a large stockpot, combine all ingredients and bring to a boil. Lentlil Soup 1Reduce heat and simmer, covered, for 45 minutes or more until the lentils, vegetables and rice are tender.

Add more liquid if needed. Lentlil Soup 2Serve.

Blogging has opened a wonderful world of new friends, including other bloggers. One of these very special gals is Barbara, who has a beautiful blog Bits of   She makes yo yos, and it’s been years since I whipped up a few. We teamed up to bring you these little throw-back gems.  Barbara made up some very clever yo yo clothes pins for Teacher Appreciation that you can see HERE.  Mine can be for Mother’s Day, Thinking of You or for any old reason.  You’re going to love these!  These fabric yo yo magnets are useful, economical gifts for Mother’s Day, Teacher Appreciation, Birthdays – just because!  So easy and quick you make up a bunch while watching your favorite program. I’d love to see what you create!

Double layer Clothespin MagnetFabric Yo Yo 1Supplies:

Clothes pin

4″ x 4″ cotton fabric

1  3/4″ wide netting – approx.

14″ long Thread



All purpose glue Mod Podge & sponge brush

Optional 1″ button or embellishment Decorative paper

Magnets – use strong ones so the clip can actually hold things without sliding down the fridge.

Hot Glue OR E6000 Glue (follow instructions on the package) Fabric Yo Yo 2


Cut the decorative paper 5/16″ wide the length of the clothes pin; or adjust for width of clothes pin.

With the all purpose glue, paste the paper strip onto the clothespin. Fabric Yo Yo 3Use the mod podge to secure and protect the paper, if desired.  Allow to dryFabric Yo Yo 4

Cut the netting to 1 3/4″ wide to 13″-14″ long (I cut several at a time as you can see here)Fabric Yo Yo 6Using TWO layers, thread the needle to about a 16″ double length with an approx. 3″ tail after the knot. 

With short stitches, hand sew the length of the netting.Fabric Yo Yo 7Gather by pulling together.

Measure the ribbon to be about 1″ longer than the clothespin.

Tuck under the ends and glue as shown. Using a glue gun, apply a small amount of glue and attach ribbon.Puffy Fabric Flower Clothespin Magnet 2Make the yo yo using a 4″ circle as shown above.

Attach the embellishment with the hot glue.

Looking for a quick, economical soup with ingredients in your panty?   Here it is and it’s also healthy, satisfying and very, very yummy.


Quick Healthy Bean Burrito Soup


1 can black beans, rinsed and drained

16 oz. canned re fried beans

2 cups chicken broth

16 oz. mixed frozen vegetables

2 cloves garlic, minced

2 tsp. taco seasoning, or to taste

1 can petite diced tomatoes with chipotle chilies
Toppings: Cheddar cheese, shredded Sour cream Cilantro, fresh, chopped Avocado

Directions: Rinse and drain the black beans.Bean Burrito Soup 3In a large pan mash the beans with a potato masher, the back of a large spoon, or any utensil that will work.Bean Burrito Soup 4To the mashed beans, add the broth and the can of refried beans, combining well.Bean Burrito Soup 5

Add the mixed vegetables, garlic, taco seasoning and diced tomatoes.Bean Burrito Soup 6Reduce the heat and simmer, covered, until the flavors are blended and the vegetables are tender, about 10 minutes.Bean Burrito Soup 7Pour a portion into a serving bowl.

Top with any of the toppings desired.

Here is a wonderful old fashioned, easy and quick dessert that the whole family will enjoy.  The crust is flaky and tender.  The apple filling is a fabulous blend of tart and sweet. Give it a try with sugar sprinkled on top, or even a thin glaze.  This recipe can easily be made into tarts too!


Homemade Old Fashioned Apple Turnovers or Tarts


1 tsp. grated orange zest

2-3 Tbl. freshly squeezed orange juice

1 ¼ lbs. tart apple

1/4 cup butter

3 Tbl. craisins or dried cherries, opt.

3 Tbl. sugar, plus extra for sprinkling on top

1 Tbl. flour

1/4 tsp. cinnamon

1/8 tsp. nutmeg pinch salt

1 package (17.3 oz, 2 sheets) frozen puff pastry, defrostedApple Turnovers 1


Preheat oven to 400 degrees. Peel, quarter, and core the apples and then cut them in ¾” dice.Apple TurnoversMelt the butter and toss with the sliced apples.

Cover a baking sheet with either parchment paper and place one layer of the apples on the sheet. 

Bake in the preheated 400 degree oven.Apple Turnovers 2Bake until browned, approx. 15 minutes, however this will depend on the size of apples. 

When the apples are browned on one side, turn over to brown on the other. 

Combine the orange zest and orange juice in a bowl. 

Very gently toss the browned apples, sugar, flour, cinnamon, nutmeg and salt; mix well.

Flour a board and lightly roll each sheet of pastry to a 12×12” square. Apple Turnovers 4

Cut each sheet into 4 smaller squares and keep chilled until ready to use.Apple Turnovers 5Brush the edges of each square with an egg wash or water and neatly place about 1/3 cup of the apple mixture and seal by pressing the edges with a form (but not thin or it will burn).Apple Turnovers 6If you are adding in the craisins or dried cherries, add them on top of the apple mixture and brush edges with beaten egg as pictured above.Apple Turnovers 7

Fold the dough over the apple mixture to form a triangle.

Using the tines of a fork, press firmly to seal the edges of the turnover.Apple Turnovers 8Transfer to a sheet pan lined with parchment paper.

Sprinkle with sugar, make 2 small slits Apple Turnovers 9Bake for 20 minutes in the 400 degree oven, until browned and puffed.

Serve warm or at room temperature.Apple Turnovers 10

To make tarts:

Roll the puff pastry to about 14”, then cut into 16 squares.

Put a bit of the apple mixture in each, and a couple of craisins, if using, in each tart.

Poke holes with a fork to vent instead of slits due to smaller size.

My very good friend Dorthy is back with a perfect Thank You card. This card is easily made, as it is  really quick to put together, and you probably have most of the supplies on hand already.

I hope you will make this very creative and ideal card for someone special and a few extra to have on hand.  A handmade card speaks volumes to express gratitude and appreciation.

Hand Made ‘Thank You’ Card

Supplies needed

1- 4 ½” x 11” plain piece of cardstock

1-3 ½” x 5 ½” print piece of paper

1-1 ¼” x 5 ½” contrast piece of paper

2- Solid colored tags cut out of cardstock (1-1 ½” x 1 5/8” 1- 1 ¼” x 1 3/8”)

1-embellishment of your choice

12”- coordinating ¼” ribbon

Stamp and ink for sentiment (or handwrite it or print on computer)

1-     Cut all pieces according to directions

2-     Fold 4 ½” x 11” cardstock in half
