A buffet to satisfy everyone on Halloween

The Halloween Buffet and Panini Bar turned out scrumptious and fabuous thanks to my daughter-in-law Ashley.

She helped me set up the buffet table and it looked grand!

Thank you so much Ash for your time and very cool decorations. It make it all come together boo-tifully!

On Halloween night, at our place, family and friends drop by to show off their kids, or grand kids, their costumes, and visit for a spell.

It is usually the tradition to have chili, soup, stew or even a pizza decked out to look like a pumpkin.

But I wanted something that as people came by, they could make their own food to their liking. 

See, something went terribly wrong, and a few of my kids do not like soups or pasta (I know….WHAT?). So a panini bar fits everyone just right.

This is family friendly to the best!  There’s something for everyone.  Healthy food. Have gluten free bread on hand.  People can make their  sandwich hot or cold.  And best of all….you get to relax and enjoy the company!

A panini bar is a wonderful option for guests to make their own.  See below for more on the paninis.

Here are the details of the awesome Halloween Buffet Table.

The plates and utensils were on a side table due to space.

Granny Corn, Mother Sugar Popcorn

Halloween Mother Goose PopCorn Granny aka Sugar Corn aka Granny Popcorn is an easy no-fail popcorn.

Mother Goose Popcorn is usually pink, but it lends itself easily to being any color your desire.

For Halloween color it Orange or Purple, or even half the recipe and make both! 

For a very special treat, toss in some Halloween colored candied Sixlets, M&M’s or other candies and you’ve got a real winner for family, friends, neighbors, coworkers – all ages will enjoy this homemade Mother Goose PopCorn delight.



Halloween Mother Goose PopCorn

Ingredients:

5 cups sugar

2 tsp. vanilla

1 ½ tsp. salt

12 oz. (1 can) evaporated milk

4 drops food coloring: HERE is a set of colors to check out

32 cups popped popcorn, place into a large bowl discarding any corn that didn’t pop
A GOOD candy thermometer.  Click HERE to see this one

Directions:

In a medium heavy saucepan over medium heat, combine sugar, vanilla, salt, vanilla, evaporated milk and food coloring. 

Attach candy thermometer to the side of the pan. 

This is important and be sure it is working properly – buy a new one if you have a question. 

Be sure the end of the candy thermometer, the bulb does NOT touch the bottom of the pan, yet in the mixture. 

STIRRING CONSTANTLY cook over medium-high heat until mixture boils.

When it comes to a boil turn down to medium; continue stirring until the thermometer reaches 235 degrees.Pour the candy mixture over the popcorn and toss gently till completely coated.

Stir gently, turning from the bottom bringing the candy mixture up to the top.



In the beginning the candy coating on the popcorn will be shiny.

Continue to stir gently; pulling from the bottom to the top.

Then in about 2-3 minutes –

The candy coating sugars and becomes that wonderful throw-back candy we can still enjoy today.

I’ve got my EYE on YOU! 

Ok, ok, I know these are a bit ghoulish, but I do think food is a great way to have fun. 

These are easy and definitely an eye-stopper…alright, I’ll stop, heehee.  

I’ll show you just how quick these are to make and they would be great for an older kids party and fabulous for a teens party. It could be part of their activities to make make the cupcakes.  Be sure to freeze the cooked un-frosted cupcakes and let them frost them while frozen.  It’s much easier.  They will have a eye-poppin time…oohh I couldn’t resist:)

Ingredients:

1 Pillsbury Funfetti Radiant Red Cake Mix Ingredients listed on back of package, click HERE to go to the product

1 container of White Frosting

Red decorating edible gel   HERE is an option

Eyeball Candy decorations  CLICK HERE for these, OR these

 

Directions:

Heat oven to 350 degrees. 

Now we need to prepare our pan.

Find a glass or anything round that is approximately the same size as the bottom of the muffin/cupcake section of the pan.

Trace 12 onto parchment paper and cut out.


Coat the bottom of the cupcake/muffin section with non-stick cooking spray.

Place a round piece of parchment into the bottom and coat the sides and parchment well with non-stick cooking spray.

Mix the cake mix according to directions on the back of the package.

Pour into the cupcake/muffin tin, dividing batter between the 12 cups.


Bake according to directions on the back of the package.

When done, cool, then remove from tins.

Frost the completely cooled cupcakes with the white frosting.

TIP:  Freeze the cooled and baked cupcakes before frosting. Frost while frozen, it is much easier.

Color approximately 1/2 – 2/3 cup of the frosting to a deep red.

Place the red frosting into a sandwich sized baggie and clip the corner with a small cut.

Make the veins of the eyes with the red frosting.

Now for the fun.  

Center the eyeball candy in the center and that’s it!
