Fresh Strawberry Angel Food Cake

Fresh Strawberries with Angel Food Cake make this a trifle and a dessert in one!

What do angels eat?  I dare say this would be it!

I mean seriously, look at this extraordinary dessert!!! It’s beautiful and don’t you want a slice…plate of it now?

Do you like Angel food cake?  It’s at the top of my favorite desserts list. It could only get better when you combine it with sweet strawberries and whipped cream.  Now THAT my friend’s is paradise, which is why I say angels ask for it:)

I’ll show you how to make this stunning cake.  You’ll look like a professional baker with my easy to follow, step-by-step tutorial pictures on the following pages, so let’s make one together!

Stuffed Angel Cake Delight

Ingredients:

1 store bought angel food cake  *I used a large one, about 22-26 oz.

14 oz. can sweetened condensed milk *can use low fat or fat free

3 Tbl. lemon juice

2 tsp. almond extract

1 Tbl. vanilla extract

16 oz. prepared topping, such as Cool Whip *can use low fat or fat free   – I normally prefer fresh whipped cream, however prepared whipped cream such as cool whip holds up longer and performs better in this particular recipe

1 lb. fresh strawberries

3 oz. sliced almonds, optional

Directions:

Dry toast the almonds in a fry pan over medium heat.

Stir constantly, watching closely and take the pan off the heat as soon as the nuts begin to turn brown.Stuffed Angel Food DelightIn a medium mixing bowl, combine the sweetened condensed milk, lemon juice, almond extract and vanilla extract.

Meanwhile, using a serrated bread knife, cut 1-inch off from the top of the cake.Stuffed Angel Food DelightCarefully remove the top layer and set it aside.

Then, with the tip of the knife, cut into the cake along the inner and outer edges, leaving a 1-inch border of the cake intact; creating a tunnel.

Using your fingers, carefully hollow out the cake between the two cuts, using care not to remove the bottom of the cake.  

Tear the hollowed out pieces into a little larger than bite sized pieces and place into a medium bowl.Stuffed Angel Food DelightHull the stems off the tops of the strawberries; cut into bite sized pieces.  Stuffed Angel Food CakeSet aside. 

Pour approximately  1 – 1 1/4 cups) of the chilled whipped topping (such as cool whip) mixture into a bowl,

Leaving the rest in another bowl.Stuffed Angel Food DelightCombine together the angel food cake chunks, the cut up strawberries and the approximately one cup of the whipped cream mixture.Stuffed Angel Food Cake

 

Spoon the whipped topping and strawberry mixture into the tunnel of the cake, packing in as needed to make it level on the top.Stuffed Angel Food DelightOn a serving plate, put pieces of waxed paper that can be pulled out easily after the cake is decorated.

Place the cake on top of the waxed paper pieces.

Place the top of the angel food cake back in its place. 

Use the remaining whipped cream mixture to frost the entire cake.Stuffed Angel Food DelightSprinkle with the cooled toasted almonds.

Gingerly pull out the pieces of waxed paper for a clean area around the cake.Stuffed Angel Food DelightChill until ready to serve.

Make and serve the same day.   The reason to make and serve the same day is because fresh berries ‘weep’, meaning they release their own liquid; which will cause the cake to go soggy or break down.Stuffed Angel Food DelightRecipe adapted slightly from butterwithasideofbread.com.

#4 – Chip Clips
 Wanbi Tape Clothes Pins Mod Podge & foam brush, optional

Directions:
Have kids (help if young) center the wasabi tape on the paperclip and press down, tucking under on ends. Do this on both sides of the clothes pin. If desired, have child (or help if needed ) cover the wasabi tape covered clothes pin with mod podge which will help it last longer and keep it nice.  Also, the bit that is folded over the sides

Easy Refried Beans made in a Crock pot or slow cooker

Are you looking for the  BEST Crock Pot Refried Beans?

Not those flavorless, bland refried beans, like some canned ones, or those made with tons of lard.

These have really great depth of flavor, and the BEST part….

My easy Best Refried Beans creation are made in the crock pot!

I mean what can be easier than that?

And the result -every time I serve these BEST Crock Pot Refried Beans, I get rave reviews and so will you! 

I have easy to follow picture tutorials so you can easily make these BEST Crock Pot Refried Beans yourself and I’ll also tell you the trick to freezing them perfectly.

BEST Crock Pot Refried Beans

Ingredients:

1 lb. dry pinto beans (1 1/2 – 1 2/3 cup), rinsed, remove any shriveled beans or stones  

1/2 teaspoon salt

1 large yellow (best flavor for long cooking) onion, peeled and cut into chunks

2 Tablespoon garlic, chopped or minced

1 jalapeno or Anaheim pepper, seeded and chopped (adds flavor, not heat)  

—-

1/2 teaspoon salt

1 Tablespoon white vinegar

1 teaspoon balsamic vinegar

1/4 – 1/2 teaspoon cumin

1/8 – 1/4 teaspoon chipotle chili powder (or regular chili powder. However Chipotle adds a wonderful smoky flavor)

4 Tablespoon real butter (don’t skimp here!)

1 to 1  1/2  teaspoon chicken bouillon, or to taste

1/2 teaspoon Montreal steak seasoning 

 

Directions:

The night before  rinsed the beans in a colander, checking for  stones or shriveled beans.

Let sit large bowl and cover with at least 5 inches of water.

Let them soak overnight, or at least for 8 hours.

This is an important step.  

Why?

Because by soaking the beans and then rinsing them very well with water before proceeding; this cuts down dramatically on the gastrointestinal issues (aka gas) produced by beans.

After soaking the beans overnight, rinse them in a colander over and over with water a few times.

Pour the soaked and rinsed beans into a crock pot.

 

Next step

Prepare a Jalapeno or an Anaheim pepper.

Using  disposable gloves is a good way to cut up the peppers because it keeps the juices/oils from the peppers off of your fingers/fingernails; which can really burn your eyes or sting your face or anywhere you touch.

Removing the seeds and membrane, which will leave the flavor, but not the heat.

In the crock pot, along with the rinsed beans, add in the salt, cut up onion, garlic and jalapeno or Anaheim pepper.

Next Step

Cover  the bean and vegetable mixture with approximately 4-5 inches of water.  

Place on the lid and set to cook for 4-6 hours on high, or 8-10 on low.

The time of cooking will vary depending upon the age of the beans. 

Be sure to check on your beans periodically to see if more water needs to be added.

Again, this depends on your beans.

When the beans are tender to the bite, then pour into a colander which is set INSIDE of a large bowl and drain to reserve the bean juice. 

Or scoop out the liquid with a spoon and save.  ***VERY IMPORTANT STEP  You want to SAVE the liquid the beans have been cooked in!!!

Next Step

  • Place the drained bean mixture into a food processor. 
  • A blender will make a very smooth bean, whereas a food processor will allow you to make the beans with texture if desired.
  • If you prefer really chunky re-fried beans, use a potato masher instead of a food processor.

Add in the ½ tsp. salt, vinegar, cumin, chipotle chili powder, REAL butter, bouillon and Montreal steak seasoning.  (I like to 1 1/2 times the seasonings, but then I love a punch of flavor.  I recommend making as directed in the recipe though the first time, and then adjusting to your taste.)

Give it a whirl, then add in a bit of the reserved bean juice; just a small amount at a time until the texture is the way you prefer.

Serve warm.

TIP:  Refried beans freeze very well.

Soon into freezer baggies or containers when cooled and place in freezer.

SAVE some of the bean juice and  freeze in a separate freezer baggie or container.

When thawing the beans, also thaw bean juice and add to beans if they seem dry after freezing. They will taste like the day you make them – or better since the flavors have had time to marry.  ENJOY!

Pumpkin Shakes are all the rage, and this is the BEST Creamy Pumpkin Shake around!

It’s imple to make and has all the flavors of the season. 

This is like having pumpkin pie in a shake:)  

Make this Creamy Pumpkin Shake for yourself, your family, or friends that stop in; everyone will love this one. 





Creamy Pumpkin Shake

 Ingredients:

2 cups vanilla ice cream

2/3 cup canned pumpkin puree(not pumpkin pie mix)

1 teaspoon vanilla

2 teaspoons brown sugar; to your desired sweetness

1/2 cup milk

1/4 – 1/2 teaspoons pumpkin pie spice, to taste

1/8 teaspoon ground nutmeg

 

Directions:

Combine all ingredients in a blender and combine well.

With Halloween season it’s sweets and rushing around to lots of fun events.

So if you are looking for a meal idea that is festive, easy, simple and fast, I’ve got you covered!

This is a meal the kids and family can help make too.

Halloween Spidey Tacos are delicious, in expensive and everyone likes a taco. Make some for your family or a party!

 



Halloween Spidey Tacos

Ingredients:

LARGE/JUMBO olives, 2 per spider

Corn tortilla shells that stand on their own

 

Taco ingredients:

Cooked ground beef, or your preference of meat

Taco seasoning if desired 

Lettuce

Tomatoes

Grated cheese

Sour Cream  





Directions:

Cut one olive per taco, in half, then each half into 4 slices to make 8 ‘legs’ per olive.

Directions:

Lay the largest piece(s) of foam decoration you are using on the canvas, placing where you would like it to be. 

Trace it lightly with a pencil, then remove it.

Dip the child’s finger or thumb into the paint and help place it where you desire, applying pressure and helping to roll the thumb.

When the paint is dry use the brush to draw the stem and leaves, making the child’s first initial, or even the name, as part of the stem. 

You can see in these pumpkins’ there is an “R”.

Draw faces on the pumpkins with the black paint and brush.

Now place the large piece of foam, such as the tree, in place and decorate with any other pieces to fill in the space as desired.

Halloween Decoration for your home

 

It’s incredibly easy with my step-by-step tutorial and perfect to do while watching a movie, or visiting with family and friends. 

All you do is rip or cut fabric strips and tie half a knot, that’s all there is to it!

By making your own DIY Halloween Garland Spooky homemade decoraction you can match your Halloween decor or use what you find on sale. 

This is also a wonderful activity to involve the kids or the entire family.

Great for a girls craft night.   

So fun, you could make one for a relative or neighbor. 




Make Your Own Spooky Garland

Supplies:

You can click on the titles I have in colored print below to go directly to the products.  

Also, you can easily adjust for a different length of light cord.  I show measurements for a 7 foot cord, but 1  1/2 times the measurements for a 10 foot cord, 3 times the measurements for a 20 foot cord and so on.  It’s a very forgiving pattern; just tie on the fabric and mesh strips to your liking.  

 

3  1/2 – 4  yards of 42″-45″ wide fabric.

Recommended to get 2 different patterns that compliment each other of approx.2 yards each (to give yourself plenty to finish the project, extra is better then running out). It must be 100% cotton so that it tears easily I have links here to make it easy if you’d like to check these supplies out.

TIP* we actually found that using TWO strands of lights worked better than just one, so you might want to double the light strands like we did, though I only show one in the tutorial.  Instructions: Cut the 42″-45″ width fabric at 1 inch intervals, beginning on the short end of the fabric –

cut several at a time as you go, but not all at once, just in case you do not need all the fabric, then you can use it for something else.

Rip the length of the fabric giving you a 1 inch wide by  42″-45″ strip of fabric.

Measure the strip and divide it into fourths and that is where you will cut giving you 4 pieces that are approximately 9 1/2″ – 11″ long

With the mesh ribbon cut it at 10″-11″, whichever works best for the length of fabric you have pieces of.

Again, cut as you go, but not all the roll just in case you have extra you will be able to use it for another project.

Taking the mesh ribbon, fold it over, dividing it into thirds.

Try to be consistent, but does not have to be exact.

Cut along the long sides, giving you 3 pieces of the 10″-11″ mesh.



Begin to tie the fabric alternating with one pattern the mesh ribbon, the other pattern, the mesh ribbon, etc.

Chocolate Dipped Banana’s to make frozen pops

I loved making these Chocolate Dipped Banana Pops for my kids while they were growing up and then teaching them how to make them as they learned to cook.  

Chocolate Dipped Banana Pops are perfect for a hot day, or any time family and friends get together.

Besides being very economical , they are so simply and quick, it’s a great treat or snack to whip up; and who doesn’t love chocolate!

Dipping the Chocolate Dipped Banana Pops in sprinkles, nuts, whatever you’d like makes them special to your taste.  Freeze extra to have on hand for a frozen tasty dessert. 




Chocolate Dipped Banana Pops

Ingredients:

6 -8 large bananas  (use bananas that are ripe, but firm and not too ripe – see picture below)

1 bag of semi sweet or milk chocolate chips

1 Tbl. shortening

Toppings:  sprinkles, chopped nuts, coconut (toasted makes it better) or whatever you’d like

craft sticks aka Popsicle sticks

 




 

Directions:

Line a cookie sheet with parchment paper or waxed paper

Cut the bananas in half , or in chunks about 3 inches in length, which is actually easier for dipping and eating.

Chocolate Banana PopsMake a small slit in 3 places at the cut end of the banana to make it easier to peel. Chocolate Banana Pops

Place stick in end of the banana, pushing in about half way through to make it secure.

If cutting into chunks, push craft stick almost through the banana piece.

 

Chocolate Banana PopsPlace bananas in freezer to help them be a bit more firm when dipping. While the bananas are in the freezer, pour the chocolate chips into a microwavable bowl, along with the shortening.Heat the chocolate chips and shortening for 30 seconds, stir and repeat a few times until the chocolate is melted and smooth. **Do not over heat as this will make the chocolate clumpy and not usable for this recipe.When the chocolate is melted, take the bananas out of the freezer, and one at a time, roll in the bowl of melted chocolate using a spatula to help coat the banana with chocolate, scrapping of a bit of chocolate if it is too thick.Chocolate Banana Pops

Roll in desired toppings, or leave plain.  

Chocolate Banana PopsPlace the bananas back in the freezer to firm up as each one is coated.                                                                                                                                                                                                                  Enjoy now while the center is still soft, or place in a zip-lock freezer bag to eat later.                                                                                                                                               Some like the frozen bananas straight from the freezer and some like to let them sit at room temperature for 10-15 minutes to soften a bit making the center of the banana creamy and like ice cream. Either way, ENJOY!!!
