You don’t have to wait for St. Patrick’s Day to make the BEST Reuben Sandwich ever!  

This best Reuben Sandwich is a must in your regular meal rotation, because it’s so delicious. 

Start with lots of tender corned beef stuffed in between thick slices of marbled rye bread.

Generously spoon on the quick to make homemade crisp slaw; which compliments the corned beef amazingly. 

Then top it all off with a Thousand Island dressing that you make yourself in hardly any time at all.  This sauce is better than anything you can purchase, seriously it’s fabulous. 

The combination of layers creates one of the most extraordinary sandwiches you’ll ever eat.   

In the Reuben you can use slow cooked corn beef, and the link is HERE , or  you can use deli pastrami to make it even easier. Either way, this sandwich will satisfy even the heartiest appetite.

It’s an excellent choice in sandwich to take on an outing, a picnic, or to make ahead for a busy day because it’s a crowd- pleaser, and your family will ask for it often. 




The BEST Reuben Sandwich with Homemade Slaw & Homemade Thousand Island Dressing

Ingredients:

Rye Bread OR Marbled Rye Bread

Cooked Corn Beef (click HERE for my recipe to cook it yourself, just stop before adding in the potatoes, cabbage, etc.), deli sliced corn beef or pastrami

Homemade Broccoli Slaw, recipe below

Homemade Thousand Island Dressing, recipe below

 

Directions for assembling the Reuben:

       1- Place a piece of bread on plate.

       2- Generously place cooked corn beef

       3- Spoon mixed slaw liberally over meat

       4- Pour dressing over slaw

       5- Top with another slice of bread

ENJOY!

 

Homemade Broccoli Slaw

Ingredients:

1/3  cup real mayonnaise (can use Miracle Whip, but it tends to overpower it with sweetness)

1/8 tsp. celery seed

1/8 tsp. garlic powder

1/8 tsp. onion powder

1/8 tsp. Emerill Original Seasoning

3 tsp. seasoned rice vinegar (vinegar with sugar added)

12 oz. broccoli slaw

5-6 green onions, sliced thin




Directions for slaw:

To make the Homemade Thousand Island Dressing:

1- Combine the mayonnaise, celery seed, garlic powder, onion powder Emerill’s Original Seasoning and rice wine vinegar.

2- Allow to sit 15 minutes to overnight. 

 

Thirty minutes to 2 hours before serving/assembling the Reuben sandwich:

In a large bowl, combine the broccoli slaw, sliced onions and dressing.

Mix the dressing into the broccoli slaw.

Serve. 

Keep any leftovers in the refrigerator, use within 2 days.Broccoli Slaw 3




Homemade Thousand Island Dressing

Ingredients:

1 cup REAL mayonnaise

1/4 cup chili sauce

1 Tbl. minced yellow onion

1 Tbl. minced dill pickle

1 Tbl. minced celery

1 Tbl. sour cream

1/2 tsp. dry mustard

dash hot pepper sauce

1/4 tsp. Worcestershire sauce

1/4 tsp. sugar

Salt to taste



Directions for Homemade Thousand Island Dressing:

1- In a bowl combine all the ingredients and mix well.Thousand Island Dressing2- Cover and refrigerate for at least 30 minutes to allow the flavors to marry.

Easy Traditional Irish Soda Bread

This Easy Traditional Irish Soda Bread recipe is very tender and flavorful.

And it comes together so quick, you’ll make it often. T

The secret is in the buttermilk which keeps it moist, while the raisins give a slightly sweet taste; which is perfect for toast the next day – if there are any leftovers.  I usually make a few extra batches just for this reason.

In fact, it’s a great recipe to multiply without any problems at all.  

Irish Soda Bread is traditionally served with Corned Beef and Cabbage.  You can get my really easy delicious crock pot / slow cooker recipe HERE. 

However, because this Traditional Irish Soda Bread is so easy and quick, you’ll find yourself serving this all during the year.




Easy Traditional Irish Soda Bread

Ingredients:

3 cups flour

1/4 cup granulated sugar

1 Tbl. baking powder

1/2 tsp baking soda

1/2 tsp salt

1 ½ cups raisins

1 ½ cups buttermilk (this really must be buttermilk for best results)




Directions:

Preheat oven to 350 degrees.

In a large mixing bowl, combine all of the dry ingredients.Irish Soda Bread 1Add in the raisins slowly, while mixing the ingredients, to allow the raisins to become coated with the flour mixture.Irish Soda Bread 2Add in the buttermilk slowly.Irish Soda Bread 3Mix only until incorporated and a soft dough forms.

Turn the dough out onto a lightly floured surfaceIrish Soda Bread 5Knead just until it forms a smooth ball, no longer; again, it makes a tough bread.Irish Soda Bread 6

Flatten the ball so that the sides and middle are about the same thickness to ensure even baking.Irish Soda Bread 7Place the dough onto a cookie sheet pan that has been coated with spray release, or on a pan that is lined with parchment paper.

Slash the top a few times with a sharp knife, which provides ventilation, and is the signature of this type of bread.Irish Soda Bread 8




Bake 35-45 minutes; until browned and cooked through. I like to use a cooking thermometer for all breads, it really helps such as THIS ONE 

*If it becomes too browned while cooking, tent with foil, and finish cooking till the center is done.Irish Soda Bread 9When you can thump the bottom and it sounds hollow it is cooked through – as long as the bread was formed to an even thickness.

Easy Corned Beef and Cabbage

Are you looking for THE best and easy Corned Beef and Cabbage recipe?

But worried the meat will turn out dry or the seasonings not right?

Hands down, this really is the easiest and tastiest Corned Beef and Cabbage recipe I’ve found and so I use it year after year; I think you’ll really like it too.

You get the traditional Irish Dinner made in your crock pot, or slow cooker,  and it’s really the best method for a no-fuss, no-fail, tender, fall apart tender moist meat that is seasoned perfectly.

TIP:  When you find a great deal on good cuts (flats with little fat are your best value for the money), buy an extra.  Wrap them well and freeze for later. 

Here’s a little tidbit of information.  Corned beef is prepared by using the brisket, which is cured in a brine solution with seasonings.  So it’s a very special type of meat and really cooks nicely in the crock pot or slow cooker using my recipe slowly in moist heat, which produces a savory, slightly salty extraordinary tender piece of meat.




Best Crock Pot Corned Beef and Cabbage

Ingredients:Easy Corned Beef and Cabbage

5-6 lbs. corned brisket of beef – get a ‘flat cut’, with as little fat as possible

2 medium to large onions, peeled and sliced thick

4 ribs celery, chopped

2 tsp. whole peppercorns

3 tsp. whole cloves

4 whole garlic cloves OR 2 Tbl. minced garlic

8 bay leaves

2 tsp. mustard seeds

5-6 medium red skinned, or thin white skinned potatoes

1 – 1 ½ lbs. baby carrots

1-2 pkgs. frozen Brussels sprouts

1 small white cabbage, cut into quarters (red cabbage “bleeds” and loses its color)

3-4 Tbl. fresh parsley, chopped

 

Optional:  

Stone ground mustard, Dijon mustard and creamed horseradish




Directions:

In the bottom of the crock pot add:

1 sliced onion, 2 chopped celery ribs, 1 ½ tsp. peppercorns, 1 ½ tsp. whole cloves, half of the garlic cloves or 1 Tbl. minced garlic, 4 bay leaves and 1 tsp. mustard seedsCorned Beef and Vegetables 2Rinse the corned beef off  in cold water.Corned Beef and Vegetables 3

Place it in the crock pot with the fat layer on the topside, if there is a side with more of a layer of fat

On top of the corned beef, layer the rest of the onion, celery, peppercorns, whole cloves, garlic, bay leaves and mustard seed.

Then pour in enough water to cover the corned beef. Corned Beef and Vegetables 4Place on lid and cook on high for 4 hours. 

THEN Corned Beef and Vegetables 5




Turn down heat to low for approximately 4 more hours or until the meat is tender and shreds easily.Corned Beef and Vegetables 6When the meat is done, remove the hot meat to an oven proof dish/platter, cover with tin foil and place in a warm oven.Corned Beef and Vegetables 7Carefully strain the hot cooking liquid through a strainer into a large pot, discard the seasonings and cooked vegetables.Corned Beef and Vegetables 8To the strained liquid in the large pot, add in the cut potatoes and mini carrots.Corned Beef and Vegetables 9




Cover and simmer over a medium heat until al dente tender.

Meaning they  still have a slight crunch to the bite. 

Add in the Brussel Sprouts to the hot liquid and cook for 2 minutes.

Meanwhile, cut the cabbage, taking out the center core and chop into pieces or leave in chunks; as you desire.Corned Beef and Vegetables 10To the boiling al dente cooked vegetables, now add in the cabbage and parsley.

Cook just until the cabbage is tender but not mushy.

The key is to not over cook the vegetables!Corned Beef and Vegetables 11Take the meat from the tin foil.  Scrap off any layers of fat.

Slice the corned beef on a cutting board.

Using a slotted spoon, take out the cooked vegetables and place in a serving bowl; pour some of the hot cooking liquid on top.
