I partnered with the amazing company Paradise Candied Fruit, to create a recipe for you that could be made any time of the year and I think you are gonna love this one!

These Orange Pineapple Island Cookies are soft, tender, the fruit is perfectly flavored as only Paradise Candied Fruit knows how to make it, and it has a unique scrumptious taste, that keeps everyone coming back for more and more and more 🙂

Orange Pineapple Island Cookies

Prep time:  approx. 10 min.

Baking time:  approx. 40 min

 

Ingredients –

2 1/2 cups flour

3/4 cup granulated sugar

2 tsp. baking powder

1/2 tsp. salt

1/2 cup BUTTER flavored shortening

1/2 cup REAL butter

2 eggs

2 tsp. vanilla

 

8 oz. (1 container) Paradise Candied Pineapple  plus 1 Tablespoon flour

4 oz (1/2 container) Paradise Candied Orange Peel

 

Glaze –

1 cup powdered sugar

4 Tablespoons orange juice, or to your preference of consistency

1 teaspoon lemon juice

 

 

Directions – 

Preheat oven to 350 degrees.

Line cookie sheets with parchment paper.

In a small chopper put in the Candied Pineapple and 1 Tablespoon flour.  Chop just enough to make small pieces, but do not mince too little.

In a large mixing bowl mix dry ingredients together; the flour, granulated sugar, baking powder and salt

Add in the eggs, butter flavored shortening and butter

Add in the chopped Candied Pineapple, Candied Orange Peel and vanilla, and mix well.

Drop by large teaspoonfuls onto parchment lined baking pans.

Bake for 12 to 15 minutes, or until the cookies are done.

Make sure the  middles are set, but do not burn

Allow to sit and finish cooling.

When completely cool, either drizzle with glaze,

I would say: unique, exceptional and distinctive are ideal words to begin with.

These Pistachio and Cranberry Cookies are soft, buttery and a little salty with a complex flavor that will having everyone asking what magic you added to create these bites of deliciousness.

With the touch of green from the Pistachio and the red Cranberry, they are a perfect cookie for Christmas or St. Patrick’s Day, but you will want to make them all year long. After you enjoy making these; 

If you are craving something along the sweet and savory side, may I suggest these White Chocolate Lemon Cookies, they are fabulous and come together quickly. 

Or for a twist on the traditional chocolate chip, you’ll really like these Cream Cheese Chocolate Chip Cookies.




Pistachio and Cranberry Cookies

Ingredients:

1 cup butter, softened

1 cup sugar

2 eggs

1 small (3.4 oz.) package instant pistachio pudding mix

2 cups flour

½ tsp. salt

1 tsp. baking soda

1 tsp. vanilla extract

1 cup dried cranberries  


Directions:

Heat oven to 350 degrees.

In a large mixing bowl, combine the butter and sugar; cream for 4-5 minutes.

Add in the eggs and mix until well incorporated.

Pour in the dry pudding mix and mix until the color is uniform.Pistachio and Cranberry CookiesIn a separate bowl mix together the flour, salt and baking soda.

Add the dry mixture into the butter-sugar mixture just until combinedPistachio and Cranberry CookiesDrop cookie dough by tablespoon onto a cookie sheet coated with spray release or onto parchment paper (the parchment paper is the best option).

Bake for 10-12 minutes, or until just until lightly browned on the edges, and the center of the cookie is set.

Take cookies out of oven and allow the cookies to sit on the cookie sheet for 5 minutes to continue to setting (firming) up.

These are one of the most beloved cookies through generations!

I found through my research that Ginger Cookies were a common dessert in the 1800’s when one had the ingredients. 

This is my own recipe that I came up with to make the most soft and tender cookies possible.  The secret ingredient to keep it soft was given to me by my friend Sherry – butter flavored shortening! The balance of molasses, spices and ingredients compliment each other to make this a very special cookie that will be a favorite in your home too.

Old Fashioned Soft Ginger Cookies

Ingredients:

3/4 cup butter flavored shortening

1 cup brown sugar

1 egg

1/3 cup molasses

1 tsp. vanilla

2 ¼ cups flour

2 tsp. ground ginger

1 tsp. baking soda

1 tsp. cinnamon

3/4 tsp. cloves

1/4 tsp. salt

1/4 cup granulated sugar



Directions:
Preheat the oven to 350 degrees.

Line cookie sheet or jelly roll pan with parchment or coat with spray release.
In a bowl, combine the flour, ginger, cinnamon, cloves, baking soda and salt; set aside.
In a large mixing bowl, blend the butter flavored shortening and brown sugar until well combined and fluffy, about 3-4 minutes.

Bake 7- 8 minutes or until light golden brown. 

Take the pan out of the oven when cookies are set on edges and still puffy.Soft Ginger Cookies 7Allow cookies to sit on baking sheet for 3-4 minutes to cool, and then place on wire rack to finish cooling.

White Chocolate Lemon Cookies

 

These White Chocolate Lemon Cookies are sweet and sassy, just like a perfect lemon cookie should be!   

This recipe is so easy because you begin with a cake mix.  Add in a few fresh ingredients and these little treasures are sure to be a favorite.

Soft, wonderful, a fabulous blend of tart, just the right amount of sweet, combined with white chocolate morsels – simply fabulous!




WHITE CHOCOLATE LEMON COOKIES

Ingredients:

2 boxes of lemon cake mix

1 cup butter (2 sticks), melted

2 eggs

1 Tbl. fresh lemon juice

12 oz. package white chocolate chips

½ tsp. shortening

Powdered sugar

 




Directions:

Preheat oven to 350 degrees.

Melt the butter.

Pour both of the dry (unprepared) cake mixes into a large mixing bowl.

Add in the melted butter and eggs. 

Squeeze lemon juice and add into the batter.

Mix until combined.

Take out ½ cup of the white chocolate chips.

Add in the rest of the chips into the cookie batter and combine well.

Using a small scoop – I used a tablespoon to measure – roll dough into about  1  1/2” balls.White Chocolate Lemon CookiePlace on prepared cookie sheet.

Bake for 8 minutes; tops will crack.

Be careful not to over bake.

Take the cookies out of the oven and allow to sit on the pan for 2 minutes.Transfer to a wire rack to finish cooking completely.




For the glaze:

Melt the reserved ½ cup of white chocolate chips and the ½ tsp. shortening in a microwavable bowl for 30 seconds

Do not overcook or the chocolate will become chalky and unusable.

Stir, repeat for 20 seconds until chips are melted and smooth texture.

Drizzle the melted chocolate over the cookies.Then dust with powdered sugar.




OPTIONAL: Mix in all the chocolate chips, when they are cooked and cooled dust with powdered sugar OR leave as they are.

My friend, Sherry King, gave me a great tip to make my cookies stay soft – use shortening in place of butter!




Soft and Delicious Ginger Cookies

Ingredients:

2 ¼ cups flour

2 tsp. ground ginger

1 tsp. baking soda

1 tsp. cinnamon

3/4 tsp. cloves

1/4 tsp. salt

3/4 cup butter flavored shortening

1 cup brown sugar

1 egg

1/3 cup molasses

2 Tbl. granulated sugar

Directions:

Preheat the oven to 350 degrees.

In a bowl, combine the flour, ginger, cinnamon, cloves, baking soda and salt; set aside.

In a large mixing bowl, blend the butter flavored shortening and brown sugar until combined. Add the egg, then the molasses.

Slowly add the flour mixture.

Form into 1/2” balls and roll in the remaining 2 Tbl. granulated sugar. (you may need more)  Place onto cookie sheet that has been coated with spray release.

 Bake 7 minutes or until very light golden brown; they will seem a bit uncooked.

Allow cookies to sit on baking sheet for 5 minutes to continue to cook and then place on wire rack to finish cooling. Store in an airtight container
