They are family proven to be the favorite, and made over and again, year after year.

Why?

Because this recipe for the BEST Pumpkin Chocolate Chip Cookies stay soft, tender and moist, full of flavor, they scream of fall; and yet they are scrumptious anytime of the year.

They are an easy homemade from scratch cookie, you’ll make often and they freeze great too.

 




BEST Pumpkin Chocolate Chip Cookies

 Ingredients:

2 2/3 cups flour

1 tsp. baking soda

1 tsp. baking powder

3/4 tsp. cinnamon

1/2 tsp nutmeg

1/2 tsp salt

1/2 cup butter (the real thing) softened, not melted

3/4 cup brown sugar

3/4 cup granulated sugar

15 oz  can solid pack pumpkin 

2 eggs

1  1/2 tsp. vanilla

1 – 1  1/4 cups chocolate chips  





Directions:

Heat the oven to 350 degrees.

Line cookie sheets with parchment paper.

In a medium bowl, combine the flour, baking soda, baking powder, cinnamon, nutmeg and salt. 

In a separate large bowl, cream together the butter, brown sugar and granulated sugar.

Into the butter and sugar creamed mixture, add in the eggs and mix well.To this same mixture, add in pumpkin and vanilla; beat until light and creamy.

Now, add in the dry mixture to the creamed mixture and mix just until blended.

Gently stir in chocolate chips.

Drop by rounded tablespoon onto parchment lined cookie sheet.

Bake for approx. 12 minutes or until touching the tops does not indent the cookie.

Let the cookies sit on the baking pan another 2-3 minutes, then carefully remove from pan and cool on racks.

Chocolate Dipped Banana’s to make frozen pops

I loved making these Chocolate Dipped Banana Pops for my kids while they were growing up and then teaching them how to make them as they learned to cook.  

Chocolate Dipped Banana Pops are perfect for a hot day, or any time family and friends get together.

Besides being very economical , they are so simply and quick, it’s a great treat or snack to whip up; and who doesn’t love chocolate!

Dipping the Chocolate Dipped Banana Pops in sprinkles, nuts, whatever you’d like makes them special to your taste.  Freeze extra to have on hand for a frozen tasty dessert. 




Chocolate Dipped Banana Pops

Ingredients:

6 -8 large bananas  (use bananas that are ripe, but firm and not too ripe – see picture below)

1 bag of semi sweet or milk chocolate chips

1 Tbl. shortening

Toppings:  sprinkles, chopped nuts, coconut (toasted makes it better) or whatever you’d like

craft sticks aka Popsicle sticks

 




 

Directions:

Line a cookie sheet with parchment paper or waxed paper

Cut the bananas in half , or in chunks about 3 inches in length, which is actually easier for dipping and eating.

Chocolate Banana PopsMake a small slit in 3 places at the cut end of the banana to make it easier to peel. Chocolate Banana Pops

Place stick in end of the banana, pushing in about half way through to make it secure.

If cutting into chunks, push craft stick almost through the banana piece.

 

Chocolate Banana PopsPlace bananas in freezer to help them be a bit more firm when dipping. While the bananas are in the freezer, pour the chocolate chips into a microwavable bowl, along with the shortening.Heat the chocolate chips and shortening for 30 seconds, stir and repeat a few times until the chocolate is melted and smooth. **Do not over heat as this will make the chocolate clumpy and not usable for this recipe.When the chocolate is melted, take the bananas out of the freezer, and one at a time, roll in the bowl of melted chocolate using a spatula to help coat the banana with chocolate, scrapping of a bit of chocolate if it is too thick.Chocolate Banana Pops

Roll in desired toppings, or leave plain.  

Chocolate Banana PopsPlace the bananas back in the freezer to firm up as each one is coated.                                                                                                                                                                                                                  Enjoy now while the center is still soft, or place in a zip-lock freezer bag to eat later.                                                                                                                                               Some like the frozen bananas straight from the freezer and some like to let them sit at room temperature for 10-15 minutes to soften a bit making the center of the banana creamy and like ice cream. Either way, ENJOY!!!

This Easy Decadent Chocolate Mousse Cake is one of the most popular recipes at A Mother’s Shadow and at my home too.  And there’s good reason – it’s so moist, flavorful, chocolaty and just amazing!

I kid you not, this Easy Decadent Chocolate Mousse Cake is superior and you’ll be asked for this one repeatedly.

And guess what?

You won’t mind making it time and again because it’s THAT good and SO easy since it starts with a cake mix – but NO one will ever know because I have a secret trick to show you for making this Easy Decadent Chocolate Mousse Cake super moist and decadent. 

For an exceptional dessert, add some fresh fruit to the plate.  If you are looking for a spectacular gourmet meal for a special occasion, or just because serve after these Lasagna Roll Ups.  




Easy Decadent Chocolate Mousse Cake

Ingredients:

1 package chocolate cake mix  

14oz. can sweetened condensed milk

2  –  1 oz. squares of unsweetened chocolate, melted – but warm to the touch, not hot

½ cup cold water

1 (3.9 oz.) package, instant chocolate pudding mix

1 cup heavy cream, whipped

 

Directions:

Preheat oven to 350 degrees.

Cut a piece of parchment paper the size of the pan.

Spray the pan with release, then put in parchment paper and coat the entire pan with the parchment with spray release.Decadent Chocolate Mousse Cake

When the cake is cooked through, take it out of the oven out and allow it to cool on a rack for 5 minutes.

Cover the baked cake with saran wrap. This step keeps the cake incredibly moist. Decadent Chocolate Mousse Cake

When cake is completely cooled, place pieces of waxed paper or parchment on a serving plate.Decadent Chocolate Mousse Cake

Now, melt the chocolate until it’s melted but not hot.Decadent Chocolate Mousse Cake

In a large bowl, with a mixer beat together the sweetened condensed milk and melted chocolate.

Gradually stir in the water, then instant pudding and beat until smooth.

Chill the mixture for about 10-30 minutes or just until set enough to spread.

Remove the chocolate mixture from the refrigerator and stir to loosen.

Fold in the cool whip type whipped cream and return to the refrigerator if needed until set up enough to spread creating a frosting mousse.Decadent Chocolate Mousse Cake

Place one layer of cake onto a serving plate Top it with approx.  1 ½ cups of the frosting mousse.Decadent Chocolate Mousse Cake

Frost the cake, covering the sides and top with the rest of the mousse.

Refrigerate until serving, along with any leftovers.

Optional: Garnish with fresh fruit or chocolate shavings.

White Covered Popcorn with Pink and Red MandM Candy Snack Mix

oohhh, here’s a great recipe for you!  It’s Easy Valentine White Chocolate Popcorn with M&M’s candy.

Do you like popcorn like I do to snack on? 

Then you’re with me looking for creative and delicious ways to eat it.  With Valentines it gave me the perfect opportunity to show off some creativity —and colors of the season.

It also meant it had to be easy.

Begin with popcorn. Then after a quick coating of white chocolate, you toss in some Valentine M&M’s, which basically yells to all your friends and family that you gift this to, how especially sweet they are.  

This Easy Valentine White Chocolate Popcorn with M&M candy comes together so fast for a snack, a gift – really any reason is perfect for this delectable treat.  Try it and see it if its not slightly addicting for you too:) 

 

Easy Valentine White Chocolate Popcorn with M&M’s

Ingredients:

1 cup popped popcorn, white variety if possible

12-16 oz white chocolate buttons or chocolate chips

1/2 – 1 package of Valentine M&M candy

 

Directions:

Pop the popcorn in an air popper if using, or the microwave or set aside if already popped.  Do not add in extra butter.

Spread a long piece of about 2-3 feet of parchment or waxed paper on your table or counter.

Next, in a microwavable bowl, place the white chocolate.A bowl of crunchy white popcorn covered in white chocolate. Until the chocolate is smooth and the temperature a little more than that of a baby bath.

It is important to warm the chocolate slowly so it does not burn.White chocolate melted all the way

Pour the smooth and melted chocolate over HALF of the popped popcorn and stir gently.

ADD in popcorn to your liking.  Some people like more chocolate on their popcorn than others.  I used about 3/4 of the popcorn when I made it. A bowl of crunchy white popcorn covered in white chocolate. Mixed in are red and pink M&M candies for a Valentine Candy Snack Mix

Spread on the parchment or waxed paper.

Allow to set up until the chocolate is set.

***NOTE:  I like to LIGHTLY sprinkle a VERY LITTLE salt when I first spread out the popcorn to set up.  This is a personal choice and USE CAUTION not to use too much, and this is NOT necessary, but does give a bit of balance to the sweet.A bowl of crunchy white popcorn covered in white chocolate. Breaking up the set up chocolate covered popcorn, put it into a bowl and add in the Valentine M&M’s.  Serve.

French Palmier cookies made special for Valentines

Biting into one of these not too rich, but multiple layers of  awesomeness Easy Sweetheart French Palmier Cookies are…well, it’s on it’s way to being in love  😛 

But how can you get one you ask?

Do you live by a gourmet bakery?  It’s not convenient for me to get out to one all the time….

Do you have the moolah to purchase French Palmier Cookies anytime you want from the bakery? I don’t either….

Would you like me to show you how to economically and easily make these French inspired Easy Sweetheart French Palmier Cookies from puff pastry? 

Don’t let the pastry part scare you.  You keep it in your freezer to bake up anytime you want to impress your family or guests with these Sweetheart French Palmier Cookies, even if it isn’t Valentines.

These cookies are so delicate and incredibly tender, and with this little trick of making them into a heart shape, they are perfect for guests, family and friends as gifts! 

Believe me, these delicious  Easy Sweetheart French Palmier Cookies will make you everyone’s Sweetheart and they would be glorious put in little boxes or bags in:  THOUGHTFUL VALENTINE KINDNESS SWEETENS OUR DAY TOO

 





Easy Sweetheart French Palmier Cookies

Ingredients:

1 package of frozen Puff pastry, defrost according to directions on the box. Be very careful not to let the dough come to room temperature

1/4 to 2/3 cups granulated sugar, may need more or less

Pink chocolate buttons/drops/melts

Sprinkles, if desired  

 

Directions:

Heat oven to 350 degrees.

Line 2 baking pans with parchment paper.

On a clean counter or cutting board,  liberally sprinkle with granulated sugar.

Take ONE of the thawed puff pastry sections out of the package (the box comes with 2 sections) and lay it on top of the sugar.

Sprinkle the pastry  liberally with more sugar.

Roll the pastry into a rectangle of just over an 1/8″ thickness.

Working from a long side, roll it together, not tight, but snug to the middle.

Repeat this with the other side, so that both rolls meet in the middle.

Mark at 1/2″ then slice the puff pastry.

Place the cookies onto the parchment, allowing space, about 2-3″ apart.

Loosen the middle of the dough and pinch the ends together to form a heart.

Bake for 15-22 minutes, depending on the size of cookies and your oven.

Bake to a light brown yet make sure the center of the cookies are baked through.

Remove from oven and place on cooling rack.  

You can use the parchment paper for another batch of these same cookies.

When the cookies are all baked and cooled, place about 1/2 cup of the pink chocolate melts into a microwaveable bowl.

Heat for 15 seconds,

Stir well.

Continue this process for 10 second intervals until the chocolate is smooth and warm to a bit more than a baby bath temperature.French Palmiers

Spread the cookies with the melted chocolate, all or half, as desired.

 Here’s a dessert for those who love chocolate, graham crackers, cream cheese, whipped cream and anything divine!

 

This has been a family favorite for years and it is SO easy to put together.  It begins with a bottom layer of graham cracker crust.  Up next is a level of light cream cheese.  A chocolate pudding tier of thick creamy goodness is crowned by whipped topping.  Chocolate bar is grated and sprinkled on top to make it extra fancy if desired.  Yummy scrumptiousness!




 

Chocolate Divine Dessert

Ingredients:
1  1/2 cups graham cracker crumbs (about 1 sleeve)

1/4 cup sugar

1/3 cup melted butter or margarine

1 pkg. (8 oz.) cream cheese, softened

1/4 cup sugar

2 Tbs. milk

8oz. container thawed whipped topping

2 small pkgs. (3.9 oz. each) of chocolate flavored pudding

3  1/2 cups cold milk




Directions:

Until smooth and creamy.

Using care not to tear the crust.

Ingredients:
10-14 cups of popped popcorn, depending on your taste 
12 oz package of Wilton Light Green Chocolate Melts
12 oz package of Wilton Orange Chocolate Melts

Directions:

Spread out about 3 feet of parchment paper on the table or counter.

Pop the popcorn and remove all the un-popped kernels as best you can.

In a microwaveable bowl, pour in the green chocolate button melts.

Cook in the microwave for 20 seconds and stir.

Now, warm 1/2 – the entire bag of the orange chocolate button melts in a microwave-safe bowl; depending on how much you want to use.

Repeat the process for the orange chocolate as you did the green – using the same care not to burn.
Drizzle, with a spoon, the melted orange chocolate, over the top of the green coated popcorn in a random pattern.

When the chocolates are cooled and set, lifting the parchment, move it from beneath to help crack the popcorn into sections.

Guilt-Free Salted Dark Chocolate Tartlets

Ingredients:

15 mini phyllo tartlet shells

1/4 cup low-fat milk

1 tsp. butter

3  1/2 oz.   60-69% dark chocolate, chopped (about 3/4 cup)

1/2 tsp. vanilla

1/8 tsp coarse sea salt

– optional Aerosol whipped cream  




Directions: 

Preheat oven to 350 degrees.

Place phyllo shells on baking sheet and bake about 6-8 minutes until lightly crispy.Guilt Free Intense Chocolate Tartlets 1Chop the chocolate in a food processor, or by hand.Guilt Free Intense Chocolate Tartlets 2Then a small saucepan over high heat, heat the milk and butter, stirring constantly until the milk boils and the butter melts. 

Reduce the heat to low. 

Stir in the chocolate and vanilla extract until combined.Guilt Free Intense Chocolate Tartlets 3Let the  chocolate mixture cool slightly, about 2-3 minutes.Guilt Free Intense Chocolate Tartlets 4Evenly divide the chocolate mixture among cooked phyllo shells. 

Sprinkle the tarts with the sea salt, very sparsely

It’s easier to add then take the way salt. 

We decided the 1/8 tsp was way too much, though that was the original recipe.

Top each tart with a spray of whipped cream just before serving.
