Do you like pumpkin?  How about chocolate?

Then you are in for a real treat if you do.

Because I found the PERFECT match…finally!

These really are the BEST Pumpkin Chocolate Chip Bars.

Not dry crumb in the batch, quicker than cookies and YUMMY.  

The spices make it flavorful, the butter makes it scrumptious and using canned pumpkin means they make up quick anytime of the year.

I found this recipe at Mels Kitchen Cafe and they are so good, that the pursuit for the perfect pumpkin bar is over; because these really are the BEST Pumpkin Chocolate Chip Bars!

BEST Pumpkin Chocolate Chip Bars

Ingredients:
2 1/3 cups flour
1 Tablespoon pumpkin pie spice
1 teaspoon cinnamon
1 teaspoon baking soda
¾ teaspoon salt
1 cup butter (2 sticks) at room temperature
¾ cup granulated sugar
¾ cup brown sugar, packed
1 large egg
2 teaspoons vanilla
15 oz. pure pumpkin puree (do not use the canned pie filling)
11 – 12 oz. chocolate chips

Directions:
Heat oven to 350 degrees.

Coat a cake pan, 9×13, with cooking spray or line with parchment; cutting it so the parchment will go up the sides of the pan for easier removal.

In a medium bowl, mix together the flour, pumpkin pie spice, cinnamon, baking soda and salt; set aside.

In the bowl of a stand mixer or a large bowl using a mixer, cream the butter, granulated sugar and brown sugar on med-high speed until smooth.

Beat in egg and the vanilla.

Add in the pumpkin puree and mix until well.

Mix in the dry ingredients, stirring just until combined.

Now fold in the chocolate chips.

Spread the batter evenly in the prepared pan.

Bake until the edges begin to pull away from the sides of the pan and a toothpick inserted in the center comes out with just a few moist crumbs.

This will take about 35-40 minutes; depending on your oven. 

Cool completely in the pan before lifting the pars out of the pan, cutting into squares; serve.

This is the BEST White Chocolate Puff Corn, Corn Pops or Corn Puffs recipe hands down!

Want an easy and yummy sweet and salty fix? 

Well, here it is.  

My Aunt Peg called to tell me about a candy she had, and after her description, this is my version for BEST White Chocolate Puff Corn, Corn Pops or Corn Puffs.

See, depending on where these are made, they are called Corn Puffs, or Corn Pops or Puff Corn.  No matter the name, they are considered chips and are not the cereal type. Make sure you look for the right kind, sometimes it’s seasonal.

Anyway, I took a bowl to my mother-in-law Meredith’s house for her to try and she loved it.

When when makes these BEST White Chocolate Puff Corn, Corn Pops or Corn Puffs, she uses 2 packages of white chocolate chips where I use one.

It’s up to you how much coating you want.

Now these are fabulous right after making them.  However, if you can resist and let them sit overnight they get even better.  

Why?  Because the flavor improves and they are store wonderfully for a few days. 

Since these BEST White Chocolate Puff Corn, Corn Pops or Corn Puffs are so easy to make, light and easy to pack, they are the perfect gift to ship to family and friends for the holidays or any occasion.




BEST White Chocolate Puff Corn, Corn Pops or Corn Puffs

Ingredients:

1 bag of 16-20 oz. “Corn Pops, Corn Puffs or Puff Corn” ( this is not the cereal, but considered a chip or snack food) like THIS

1 – 2  package(s) white chocolate chips (preferred and use a good brand) OR use buttons / melts 

  • Non-Dairy, vegan, try THIS
  • Good White Chocolate buttons, try THIS

Directions:

In a microwavable bowl add in the white chocolate chips (preferred), buttons or melts

Slowly melt chocolate chips, stirring and heating 20 seconds, stir to prevent burning.

Continue to heat for 15 – 20 second intervals, stirring after each time.

Continue this process until the chocolate is completely smooth and the temperature is about that of a baby bath.

Pour melted chocolate over corn pops. Corn Puffs, Puff Corn or Corn Pops in a large bowl with the melted white chocolate chips poured on top

Stir gently to evenly coat all the corn pops with the chocolate.

Spread on parchment and allow to set up.The Corn Puffs, Puff Corn or Corn Pops with the white chocolate chips stirred in completely and spread on a large piece of parchment paper or waxed paper to set up

When ‘set’ store in covered container. 

It’s delicious now, but AMAZING tomorrow.
