Soft Ginger Cookies

These are one of the most beloved cookies through generations!

I found through my research that Ginger Cookies were a common dessert in the 1800’s when one had the ingredients. 

This is my own recipe that I came up with to make the most soft and tender cookies possible.  The secret ingredient to keep it soft was given to me by my friend Sherry – butter flavored shortening! The balance of molasses, spices and ingredients compliment each other to make this a very special cookie that will be a favorite in your home too.

Old Fashioned Soft Ginger Cookies


3/4 cup butter flavored shortening

1 cup brown sugar

1 egg

1/3 cup molasses

1 tsp. vanilla

2 ¼ cups flour

2 tsp. ground ginger

1 tsp. baking soda

1 tsp. cinnamon

3/4 tsp. cloves

1/4 tsp. salt

1/4 cup granulated sugar

Preheat the oven to 350 degrees.

Line cookie sheet or jelly roll pan with parchment or coat with spray release.
In a bowl, combine the flour, ginger, cinnamon, cloves, baking soda and salt; set aside.
In a large mixing bowl, blend the butter flavored shortening and brown sugar until well combined and fluffy, about 3-4 minutes.

Soft Ginger Cookies 4Chill 20-30 minutesSoft Ginger Cookies 5Form into 1/2” balls and roll in the remaining 1/4 cup granulated sugar.Soft Ginger Cookies 6

Bake 7- 8 minutes or until light golden brown. 

Take the pan out of the oven when cookies are set on edges and still puffy.Soft Ginger Cookies 7Allow cookies to sit on baking sheet for 3-4 minutes to cool, and then place on wire rack to finish cooling.

    I love Ginger Cookies. We make big soft ginger cookies during the Christmas holidays. They are probably my favorite cookie ever. Your recipe look really similar so I know I would LOVE them.

    These look so delicious…I’m trying very hard to avoid as much sugar as possible but it’s not always easy. I have a sweet tooth that is out of this world. These cookies are making my mouth water so now I need to think about something else lol
