Easy Skinny No Bake Key Lime Dessert

Ingredients:

1/2 cups fat free sweetened condensed milk

2 large uncooked egg yolks

2 tsp. butter, divided

1/3 cup bottled key lime juice (this is different from regular bottled lime juice and much less expensive from fresh key limes in most areas)

1/2 cup key lime flavored low-fat Greek yogurt

1/2 cup graham cracker crumbs

1 pinch salt

1/2 cup aerosol spray whipped cream

1 Tbl. lime zested, optional for presentation




Directions:

In a small, heavy bottomed sauce pan, combine milk and egg yolks; heat over medium-low heat,

Whisking continuously, until mixture begins to boil, about 5 minutes.Stir in 1 teaspoon butter and lime juice; pour into a shallow bowl and chill in refrigerator until cool, about 30 minutes.

Pour into a bowl or cup and chill in refrigerator until cool, about 30 minutes.




Meanwhile, melt remaining teaspoon butter in microwave in a cup or small bowl. Add graham cracker crumbs and salt to butter; gently mix.Fold yogurt into cooled lime mixture until just combined; 

Set aside.

Line up eight 2-oz  glasses.

In each glass, layer 1 tablespoon crumb mixture (pressing down to form a “crust” with the handle of a spatula or other utensil) 

Add in 2 heaping tablespoons key lime pie filling

Top with 1 tablespoon whipped topping and garnish with lime zest if desired.

Yields 1 glass per serving.
