This exotic hot chocolate is incomparable to any other in its distinctive and authentic flavor.  It has a perfect balance of a bit of sweet and an amazing flavor that comes from the Mexican Hot Chocolate Drink Tablets.  Those little tablets are so good, that a bit of taste- testing is in order, trust me.  

The cinnamon sticks give a bright undertone to the drink that’s screams foreign lands. I would recommend taking the cinnamon out after 10 minutes or so.  Some of us have a problem with too much cinnamon, and that is a ‘just-right-amount’ for the discrimination palate.

Now, for the chipotle powder.  Do not be afraid of it, please trust me on this.  I like flavor, not heat just for the sake of  having hot in my food. You just need a few pinches and it highlights the the entire Mexican Hot Chocolate to an out of this world experience.  You will LOVE this very special hot chocolate.




Mexican Hot Chocolate

Ingredients:

4 cups whole milk

5-6 oz of Mexican Hot Chocolate Drink Tablets, chopped into small pieces – these are found in the Latino or Mexican section of the grocery stores

2   3″ cinnamon sticks

1 teaspoon vanilla extract

3-4 pinches of chipotle powder, start with 2 and add, but allow time for the flavors to marry before adding more




Directions:

In a medium sized pan, over medium heat, add the Mexican chocolate, cinnamon sticks, vanilla extract and chipotle powder.     Mexican Hot Chocolate 2Pour in the milk and whisk, or stirring briskly, constantly, heat mixture through melting the chocolate; using care not to scorch the milk.  Allow mixture to simmer on low for 10 minutes.Mexican Hot Chocolate 4

Froth by whisking by hand or with a hand wand and serve if desired for an authentic way of serving this drink.

Salted Carmel Hot Chocolate

Salted Caramel Hot Chocolate is all the rage with every specialty shop touting the ir recipe is great.  Well, I have to tell you, I seriously don’t think you will find a better one than this. It’s not difficult at all to make.  The dutch cocoa brings a gourmet flavor to the drink.  And the hazelnut syrup adds a nuttiness that is one of those ‘hhmm, what is that delicious ingredient’ questions.  

Now for the salt.  It’s very common to use coarse sea salt, but my neighbor Jeremy generously gave me some mesquite smoked sea salt to try with the caramel hot chocolate as an experiment. Cups lined up, we tried some with the sea salt and some with the mesquite smoked salt.  We were very pleasantly surprised at how much we loved the smoked salt.  It brought out an entirely different flavor and YUMMY – you’ve got to try it!  There are so many salts to try that will have a blast with this drink and impress your family and guests immensely.



 

Gourmet Salted Caramel Hot Chocolate

Ingredients: 

1/4 cup brown sugar

1/8 teaspoon salt

1/4 cup dutch processed cocoa powder

1  1/3 cup half and half

3/4 cup caramel topping

2 Tablespoons caramel syrup

2 teaspoons toasted hazelnut syrup

1 teaspoon vanilla extract

3 cups whole milk

Additions: Canned spray whipped cream,   caramel sauce in a squeeze bottle coarse sea salt, mesquite smoked sea salt and other Kinds would be fun to try.


Directions:

In a medium saucepan, stir together the brown sugar, salt, cocoa powder and half & half.  Over medium heat, stirring constantly bring to a simmer and cook for 1 minute.DSC_0124After 1 minute of a simmer, add in the caramel topping, syrups and extract and bring back to a simmer and still stirring constantly, simmer for 1 more minute.DSC_0127After the second minute of simmer, which allows the flavors to marry, add in the milk and bring to heat, but do not bring to a boil.  

Warm to desired taste for serving.DSC_0132


Fill a mug about 2/3 of the way full with the gourmet hot chocolate. Then spray generously with spray whipped cream. Next drizzle with caramel sauce. Top with just put in a few pinches of coarse sea salt to your taste and stir it in for best result. Be a bit adventurous and try smoked sea salt.  

It is an amazing journey for your taste buds!

There are ways we can prevent the cold and flu from getting to us and our family, or at least lingering longer than it has to.

A few tips are:

  • Do your best to avoid people who are ill if at all possible.
  • Try to stay away from others when you are ill to prevent spreading it.
  • Wash your hands with soap and water often, particularly after touching your nose, mouth, etc.
  • Use hand sanitizer.
  • Get rest and lots of it. Your body needs a way to fight off those terrible germs and it has to have the energy to do it.
  • Drink lots, and lots of fluids.
  • See your doctor if your symptoms do not ease, or if you feel it going into your lungs, or you think you may be dehydrating.  Serious health issues can arise when a simple cold and flu is not taken care of.

 Now, this is an oldie but a goodie I heard about.  In a nice warm bath, pour in:

1/4 – 1/2 tsp ground ginger and 1/4 – 1 /2 tsp cayenne pepper (the original instruction was to use up to 1 Tablespoon of each)

Soak for 10 minutes or so to release toxins and relieve sore muscles.

To help with congestion that often comes with colds and flu’s, keeping the air moist will help. This can be done by using a cool-mist humidifier or a vaporizer, which will make it easier to breathe. And using it at night will help you sleep better because you will be less congested and cough less.

I was looking through the web for ideas for home remedy’s for this cold and flu season and this one looked intriguing.  It has all kind of ingredients that are auto-immune boosters and it is very unique. 

My handsome hubby does not care for most smoothies.  He happened to come down with the flu so I decided to try this one out on him.  He actually liked it!  It is kind of thick, so it can be eaten with a spoon, or use a thick straw.  The cold soothes your throat going down and it is one we will make again when the flu swings by our place – but hopefully not too soon:)

 

Flu-Buster Smoothie

Ingredients:

1 large ripe banana, peeled sliced and frozen*

1/2 small avocado, flesh scooped out, cut up and frozen*

3 Clementines, peeled, broken into segments and frozen*

2-3 pitted dates

1/2 cup coconut milk – stirred**

1 cup unsweetened almond milk

1/4 tsp. almond extract

1-2 tsp. lemon juice

Directions:

Prepare the fruit and place on parchment lined cookie sheet and freeze before making the smoothie*.  This can be done ahead of time so it is ready whenever you want to make one.Flu Buster Smoothie 2You can also pour the coconut milk into the frozen fruit. 

You can get approximately 4 servings out of a 19 oz. can of coconut milk.Flu Buster Smoothie 3Stir the coconut milk well before using**Flu Buster Smoothie 4When ready to make the smoothie, in a blender add in the frozen fruit, dates, coconut milk (unless already frozen with the fruit), almond milk, almond extract and lemon juice.Flu Buster Smoothie 5Blend until smooth.Flu Buster Smoothie 6

Serve.  It will be a thick mixture.

I found this recipe for a soothing homemade tea to combat the cold and flu on Chatelaine.  The breakdown on the ingredients is fabulous –

Lemon: Full of vitamin C which can help reduce the duration and severity of symptoms if you already have a cold.

Cinnamon: Antioxidant spice which adds a warming flavor.

Ginger:  Used for centuries to relieve a sore throat and loosen up congestion due to a cold. Best known for its ability to calm an upset stomach. Ginger can also treat vomit and nausea.

Cloves: Make it easier to cough up and eliminate phlegm.

Turmeric: One of the most effective anti-inflammatory around and also relieves gastrointestinal discomfort.

Cayenne: Helps with stomach problems and poor appetite.

Honey: Has small amounts of vitamin C and folate; can also soothes and calms sore throat.

 

Soothing Herbal Tea Remedy

Ingredients:

3 cups water

Juice of 1 small lemon

2 cinnamon sticks 5″

6″ piece of fresh ginger root, peeled and sliced thin

1/4 teaspoon whole cloves 2 teaspoons turmeric (this does stain, use caution)

1 pinch cayenne (you can add more if desired) *

1 – 2 Tablespoons honey depending on desired taste

 

Directions:

Add all the ingredients, *except the honey, to a pot and bring to a boil.

Soothing Herbal Tea Remedy 1Once it comes to a boil, reduce the heat and let it simmer for about 10 minutes.Soothing Herbal Tea Remedy 2Strain through a fine strainer. 

Stir in honey to taste and drink while warm.

It seems that every year the gunk in the air settles in, the goobangoo gets passed from house to house, the sniffles, sneezes and coughs are ‘shared’ though not welcome at all, and the body aches.

Since we can’t hibernate till spring, regrettably, when all this too familiar scene started again a few years back, I went on a search for something to ward off the yucky stuff when it came a knocking at my door.  I found a recipe that Alton Brown had up with barley.  I was surprised to learn that barley had so many nutrients and by cooking and straining off the water, you can add to the vitamin rich water other fabulous natural anti-oxidant’s to chase the germs and gunk away!

I make this up in big batches and freeze it.  Then, as soon as I feel a bit icky, I pull get this out, my weapon of germ warfare, and it has really worked many times.  I use the cooked barley in soups, on top of green salads for extra protein, in meat loaf or meat balls – so many ways. It freezes well for later use so there is no waste.

 

Cure-All-Get-Well-Drink

Ingredients:

5 cups water

1 cup hulled or pearl barley (not the quick cooking type)

2 lemons, washed and rinsed off

5”-6” fresh ginger root, peeled and cut into small pieces

1/4 cup honey

12 oz. can of frozen orange juice concentrate, thawed, do NOT add water

Directions:
Place the water and barley into a medium to large saucepan (it tends to boil over);

Cover, set over high heat and bring to a boil.

Cure-All-Get-Well-Drink 2Once the barley comes to a boil, decrease the heat to low and simmer for 30 minutes, or until it is tender but a bit chewy to the bite.Cure-All-Get-Well-Drink 3Meanwhile, while the barley is cooking, peel the lemons, using care not to cut into the white pith.Cure-All-Get-Well-Drink 4Juice the lemons and pour the juice, along with the lemon peel into a 3-quart pitcher.Cure-All-Get-Well-Drink 5Peel the ginger root and slice into 1/4″ – 1/3″ slices.Cure-All-Get-Well-Drink 6Add the ginger root slices into the pitcher with the lemon juice and lemon peel.Cure-All-Get-Well-Drink 7When the barley is cooked, strain the barley water mixture through a fine mesh strainer into the pitcher, which as the lemon peel mixture. Allow to sit for 2-3 hours on the counter to steep.Cure-All-Get-Well-Drink 8Next, strain the lemon peel mixture into a container, add in the orange juice concentrate and honey, stirring well to combine.

Store the liquid in the refrigerator.

Best served chilled.

Use within 4 days. 

Makes approximately 32 oz.Cure-All-Get-Well-Drink 9

If you do not use within 4 days, you can freeze in your choice of serving portions in ice cube trays, then pop them out and store in baggie size zip lock bags or small containers to thaw and drink when feeling sick with flu, cold, etc. OR pour directly into the baggie or container and thaw when ready to use.

*Use the barley in a soup or another recipe. You can freeze it easily also for use later on.

That season of the crud is upon us and so what does a girl do? Why she calls her mom of course! My mom gave me a couple of recipes from her friend and after tweaking them – yes I just couldn’t resist, I came up with my recipe AND I have the original two to share with you also.  Homemade herbal tea’s are so comforting and soothing when the cold and flu hits; make sure to save these and see which you like best.  I’ll bet you like them all!



Carrie’s Soothing Herbal Tea

Ingredients:

1/2- 1 cup Pineapple Juice

1 teaspoon grated fresh ginger root

1/8 teaspoon ground cinnamon

2 teaspoons Bragg Organic apple cider vinegar, preferred

1 teaspoon lemon juice Pinch of cayenne pepper

1 – 2 teaspoons honey, to taste Hot water to dilute if desired

Directions:

In a small pan combine the pineapple juice, ginger root, cinnamon, vinegar, lemon juice and cayenne pepper.  Bring to a simmer and then let sit for 3-5 minutes to steep. 

Pour through a fine mesh strainer into a cup and pour in honey to taste.  I like my drinks strong, but if you prefer add in enough hot water to your liking of potency and enjoy.

 

Cleola’s Tea #1 Ingredients:

1/2 – 1 cup Pineapple Juice

1/2 teaspoon apple cider vinegar

1 teaspoon honey Pinch of cayenne pepper

Directions:

Mix in a cup and add in enough hot water to desired strength and enjoy.

Cleola’s Tea #2

Ingredients:

1 teaspoon lemon juice

1/2 teaspoon grated fresh ginger root

1/4 teaspoon turmeric

1/2 teaspoon apple cider vinegar

1/4 teaspoon honey Pinch of cinnamon

1 cup boiling water

Directions:

Mix together, steep, drain the ginger root and enjoy.

I love a cozy warm drink that makes you feel like a soft warm blanket is wrapped all around and snuggles you in.  This is a family-friendly drink I created that you would vow came from a gourmet shop.  This fabulous vanilla beverage is not sticky sweet like so many, but, instead decedent and a fabulous self-indulgent treat you don’t want to miss.

 




Cozy Vanilla Drink

Ingredients:

2 Tbl. French Vanilla Creamer 

2 tsp. Pero

2- 3 Tbl. white chocolate chips

1 cup milk, microwaved for 2 minutes or heated through (2% – whole depending on the richness desired)



Directions:

Place the creamer, Pero and white chocolate chips in a large container, large enough to hold the ingredients and contain the splash when stirred.DSC_0735Pour the hot milk into the mixture and mix with a wand mixer, electric mixer or use a blender.DSC_0737Mix until the ingredients are completely combined, the chocolate chips are dissolved and it is combined completely.DSC_0738 Serve!Cozy Vanilla Drink 1 Carrie Groneman’s original recipe.
