Oh, you are going to love this so simple, easy on the waist-line and economical recipe.
A purchased rotisserie chicken makes this come together in just the time it takes to cook up the Orzo – minutes! The flavors leave you craving it again and again and again.
16 oz. package Orzo
1 chicken bouillon cube or 2 tsp. chicken bouillon
1/2 – 2/3 of a rotisserie chicken OR 1 1/2 lbs. chicken breast grilled
6 Tbl. teriyaki marinade (NOT soy sauce)
1 tsp. Montreal chicken seasoning 1 cucumber, chopped
1 red bell pepper, chopped
8-10 green onions, sliced
3 Tbl. cilantro, chopped
8 Tbl. bottled Ranch salad dressing
4 Tbl. sweet chili sauce
2 cups carrots, shredded
Cook Orzo according to directions, adding bouillon to the cooking water for flavor.
Drain and cool a bit. In a large bowl, combine the cooked and drained Orzo and all the remaining ingredients.
Serve immediately or refrigerate for later use.
If refrigerating when ready to serve, stir to see if a bit more ranch dressing may be needed.
