St. Patrick’s Green Granny, Sugar or Mother Goose Pop Corn
5 cups sugar
2 tsp. vanilla
1 ½ tsp. salt
12 oz. (1 can) evaporated milk
4 drops green food coloring
32 cups popped popcorn, place into a large bowl discarding any kernels that did not pop
In a medium heavy saucepan over medium heat, combine sugar, vanilla, salt, vanilla, evaporated milk and food coloring.
Attach candy thermometer to the side of the pan.
This is important and be sure it is working properly – buy a new one if you have a question.
Be sure the end of the candy thermometer; meaning the bulb does NOT touch the bottom of the pan, but that the bulb is completely down inside the mixture.
STIRRING CONSTANTLY cook over medium-high heat until the mixture boils.
When the candy comes to a boil, turn it down to medium; and continue stirring until the thermometer reaches 235 degrees.
Pour the candy mixture over the popcorn and toss lightly until it is completely coated.
Now, stir gently, bringing the candy mixture from the bottom up to the top of the popcorn on the top, completely coat all the popcorn.In the beginning the candy coating on the popcorn will be shiny like this.Continue to stir gently; pulling from the bottom to the top and in about 2-3 minutes – POOF and MAGIC happens!
The candy coating sugars to look like this and becomes that wonderful throw-back candy we can still enjoy today.
