Oven Roasted Asparagus
This is a Wonderful side dish to accompany any meal.
Here is my version of a quick, but very upscale way to easily prepare asparagus.
The roasting adds a delicious depth to the flavor, the Parmesan cheese gets all wonderfully crisp on the edges, and the lemon at the end brightens the entire dish.

2 bunches of asparagus, trimmed
3 Tbl. olive oil
2 tsp. garlic, minced
½ tsp. salt
1 tsp. Montreal Steak Seasoning
1 Tbl. balsamic vinegar
½ cup fresh Parmesan cheese, grated
Preheat oven to 425 degrees.
Line a baking sheet or jelly roll pan with foil and coat with spray release.
In a large bowl add the trimmed asparagus, olive oil, garlic, salt, Montreal seasoning and balsamic vinegar. Gently turn over the asparagus to coat well.
Lay the asparagus onto the foil in an even layer. Pour any of the olive oil mixture onto the asparagus. Sprinkle the grated Parmesan cheese over the top of the asparagus.Bake for 8-15 minutes; depending on the thickness of the asparagus. Remove from oven when a toothpick will insert into the spears. Remove from oven and sprinkle with the lemon juice. Serve.
