This elegant dessert completely satisfies with its big and bold intense key lime flavor. A wonderful choice, whether it be a special occasion, or just because.
Low Fat Key Lime Dessert
1/2 cups fat free sweetened condensed milk
2 large uncooked egg yolks
2 tsp. butter, divided
1/3 cup bottled key lime juice (this is different from regular bottled lime juice and much less expensive from fresh key limes in most areas)
1/2 cup key lime flavored low-fat Greek yogurt
1/2 cup graham cracker crumbs
1 pinch salt
1/2 cup aerosol spray whipped cream
1 Tbl. lime zested, optional for presentation
In a small, heavy bottomed sauce pan, combine milk and egg yolks; heat over medium-low heat, whisking continuously, until mixture begins to boil, about 5 minutes.
Stir in 1 teaspoon butter and lime juice; pour into a shallow bowl and chill in refrigerator until cool, about 30 minutes.
Line up eight 2-oz glasses. In each glass, layer 1 tablespoon crumb mixture (pressing down to form a “crust” with the handle of a spatula or other utensil) and 2 heaping tablespoons key lime pie filling; top with 1 tablespoon whipped topping and garnish with lime zest if desired. Yields 1 glass per serving.
