Easy Oven Roasted Vegetarian Fajitas

Because you eat a Vegetarian or Gluten Free food style, do you ever feel cheated on taste?

Not with this Easy Vegetarian Fajita recipe!

It sacrifices nothing in flavor due to the homemade seasonings, which combine the perfect spices to enhance the fresh ingredients.

The vegetables are oven roasted to the right crisp, while maintaining a little crunch. Add in the amazing seasonings and  you have yourself a great fajita.

Now EVERYONE is happy and eating GOOD food!

Easy Vegetarian Fajitas

Ingredients:

Fajitas – 

2 small onions, or 1 large

2 medium green bell peppers, or 1 green and 1 yellow or orange if desired

1 medium red bell pepper

2 Tbl. vegetable or olive oil, your preference

8-16 ounces sliced mushrooms

1 lime

 

 

Seasoning – 

1 Tbl. chili powder

1/2 Tbl. paprika

1 tsp. onion powder

1/4 tsp. garlic powder

1/4 tsp. cumin

1/8 tsp. cayenne pepper

1 tsp. sugar

1/2 tsp. sugar

1/2 tsp. salt

1/2 Tbl. Corn Starch

 

Condiments – 

Tortillas

Chopped tomato

Cilantro, washed and stemmed

Salsa, optional and if marked gluten free

 

Directions:

Preheat oven to 400 degrees

Mix the seasoning ingredients together in a bowl and set aside: chili powder, paprika, onion powder, garlic powder, cumin, cayenne pepper, sugar, salt and cornstarch.

 

Cut up the onions and peppers into long strips approximately 1/4″ – 1/2″ wide.

Slice the mushrooms if needed.

To eat, place a spoonful of pepper/mushroom mixture down the center of a tortilla.

Spoon on chopped tomato and cilantro.
