We like to use an 9 – 9 1/2″ CAKE PAN to put inside the 12″ DUTCH OVEN for this recipe. Either spray the CAKE PAN with non-stick cooking spray OR You can lightly oil or coat the inside of the DUTCH OVEN it-self with cooking spray.Finely chop the onion.
Reserve approximately 1/3 of Doritos, crumble the rest in a large mixing bowl.Add in the finely chopped onion, canned chili, canned enchilada sauce, tomato sauce and 1 1/2 cups of the shredded cheese to the crushed Doritos.
Stir together well.Pour the mixture into the prepared cake pan OR prepared dutch oven.Put the lid on top of the dutch oven.Put approximately 10 prepared coals on your metal plate, or whatever surface you are going to cook on.
Place approximately 16 lit coals on top of lid.Bake until the enchilada mixture is bubbling, approx 20 minutes; however, check periodically.
Carefully remove the lid with a lid lifter. Top with remaining Doritos, crushing as you put them on top.
Sprinkle on the remaining 1/2 cup of shredded cheese.Cover with lid and bake for another 5 minutes or so until the cheese has melted and Doritos are warmed through.
Scrumptious!!!Serve as is, or with a dollop of sour cream if desired.Adapted from Recipe by 50 Campfires. Copyright Carrie Groneman, A Mother’s Shadow, 2015
